Savory Herb Waffles

A nice change for dinner. Made cream chipped turkey with mushrooms, green garlic, & onions to top them. Substituted 1 cup oat flour for 1 cup wheat flour. They were exceptionally light. Next time we might try making them without whipping the eggs or increasing the oat flour to increase the density. Perhaps doubling the seasonings could make them a more flavorful stand alone entree.

Chard Tacos

Asian Coleslaw

Added lime juice and sesame seeds to the mix. Also decreased the oil & substituted sesame oil for most of it. Used only Napa cabbage. It was wonderful! Will definitely make again.

Chicken Piccata II

Removed chicken from pan to warm in oven while making sauce & replaced in sautee pan for last 2-3 minutes. Also added an extra tablespoon or two of lemon juice to the sauce. Served with quinoa & sauteed spinach.

Fish Fillets Italiano

So tasty! Made some with fresh cod as well as frozen. Fresh was way better. Adding kalamata olives adds a lot more flavor than plain black olives. Also added a sprinkling of feta.

Chicken With Stout

Very tasty. I did not use guiness as I had a Founders Porter instead. I also used coleslaw mix instead of cabbage & added fresh mushrooms. This smelled heavenly during the last hour of cooking.

Thanksgiving Leftovers Stuffed Shells

Would not recommend blending all the ingredients. It came out much like turkey dinner flavored baby food. I will make this again, but I will mix it without the blender step. Flavor was good.

Slow Cooker Rosemary and Red Pepper Chicken

Very dry. I used white wine instead of vermouth, added fresh mushrooms & added a can of tomatoes. I think I just have bad luck with chicken in the croc pot.

Basic Cheese Polenta

Refried Beans Without the Refry

So yummy! Fortunately I made them too spicy for my kids, so there is more for me! I only used about 3 t salt & added about 4 t sodium free chicken bouillon. Using remaining broth to make smoked sausage & bean soup.

Spaghetti Squash I

This was so good, I may never revert back to pasta! I added extra veggies to the onion mixture - summer squash, carrots, asparagus, mushrooms, & spinach. I also served it with feta on the side so I would use less.

Fabulous Zucchini Grinders

So yummy. I did make a couple of minor changes: sauteed summer squash in olive oil & made my own marinara out of fresh tomatoes, peppers, onions, garlic & red wine. After looking at the photos, I wish I would have added mushrooms too! Now I'm ready to make them again!

Middle Eastern Rice with Black Beans and Chickpeas

Fabulous! Added 1 small onion to initial seasonings. Cooked ground turkey with half of the seasonings. Added a few handfuls of fresh spinach at the same time as the beans. Served over fresh spinach with greek salad. Used 1 lb turkey, 1 can black beans, 1 can garbanzo beans & regular volume of brown rice (cooked 40 minutes). Will definitely make this again. Maybe tomorrow!

Brown Rice and Black Bean Casserole

Very good. Made with about an extra cup of zucchini & an extra cup of shreded carrots, and used spicy jalapeno beans. Next time, I will try making it with chicken breast halves added when I put it in the oven (not boneless) to make it a more hearty meal.
