Judy's Strawberry Pretzel Salad

Reviewed: Apr. 9, 2010
This is a fantastic recipe. Kudos to the one who thought of a pretzel crust! I brought this to my gramma in-laws for Easter dinner and it was a huge hit. I to decreased the hot water and used berry juce to make up for it. The only thing I would change is adding a little more sugar, other than that its perfect. Thanx for taking the time to share this.

Pumpkin Muffins II

Reviewed: Oct. 12, 2010
These muffins are very good. They remind me of Tim Hortons Pumpkin Spice Muffins. I used 2 cups whole wheat, 1/2c rolled oats, 1/2c wheat bran, 1c organic sucanant, 1 single serving of applesauce, 1/4c veg oil, 1 14oz can pumpkin, and a slash a milk. Cooked these at 350 for 17 minutes and they were perfect. I fed theses to my two year old daughter and she loved them. Thanx for sharing such a wonderful recipe.

Low Fat Apple Bran Muffins

Reviewed: Apr. 15, 2009
This is an AWESOME recipe!!!! I made mine with half whole wheat flour and used skin milk soured with lemon juice, 1 tsp cinnamon, 1 tsp vanilla, a whole apple grated, and used 1/4 cup splenda brown sugar. They turned out wonderful and for once actually pretty guilt free. I'm going to experiment with some more flavors tonight. Thank you so much for this awesome recipe. Okay so I fooled arounf with this recipe a bit... added white choc chips and pumpkin pie spice, cherry flavored craisons, and also my absolute favorite one banana. I thought the banana natch wasn't going to turn out but I ended up with the most moist delicious guilt-less banana muffins. I just cant tell you enough how great this recipe is. Thank you thank you thank you

Whole Wheat and Honey Pizza Dough

Reviewed: Apr. 16, 2009
I cannot even begin to tell you all how much I LOVE this dough. I use mine to make big pizza's, personal pizzas, and even calzones. For those of you having trouble with it if your yeast dosn't proof properly then there's no sense in continuing. The water needs to be warm at least 45 but not too warm. If it proofs properly it will be thick and creamy on top. If you don't see this then start over. This is my staple pizza dough recipe and is so chewy and healthy. Thanks a million for sharing.

Jo-Ann's Power Bars

Reviewed: Mar. 11, 2010
I like all the reviewers LOVE this recipe. I really like that fact that you can make it your own and cut calories down and it still is fabulous. I used applesauce in place of oil, I TBSP Splenda brown sugar, crasins, and chopped almonds. These are plenty good. I can't wait to add banana's and peanut butter and see what I get. Thanx for such a great recipe this will be the "famous" power bar recipe my 20 month old daughter one day will call me from university asking for:)

Amish White Bread

Reviewed: Apr. 5, 2009
This is the first time I have ever attempted to make bread form scratch and I am very pleased with the results. I decreased the sugar to 1/4 cup and would still decrease it more as it is plenty sweet. I used the advice of others and used my mix-master with the dough hook and slowly added the flour and didn't increase the speed to more than 2. I also made a small 4cm diameter round pan of mini cinnamon buns. The whole recipe turned out great. Will make again. Thanx for sharing. Update: I tryed this again but decreased the sugar to 1/8 cup and also used 4 cups white flour and two cups whole wheat..turned out great. I don't recommend using the dough that way for cinnamon buns as it was tougher to roll out and when I cooked them the middle of each bun popped up. Looked pretty but not what I wanted

Health Nut Blueberry Muffins

Reviewed: Jul. 13, 2010
. This recipe ROCKS! I used all whole wheat flour, Splenda, ground flax in place of wheat germ, no egg, 1 tsp cinnamon, skipped the blueberries and added 3 ripe lg banana's, I had no milk so I had to use half and half non soured, and a small handfull of mini chocolate chips. I made them into mini muffins 24alt and one small loaf. These came out moist and delicious my two year old devoured them. Thanx for posting I can't wait to experiment more.

Sugar Spiced Almonds

Reviewed: Apr. 26, 2009
My hubby loves spicy foods and me not so much. I made this recipe for him and I am very surprised how much I actually enjoy these. They are very very good and I know I will be making these very often for him. They are a healthy grab and go snack. The only thing I did different was I added one egg white as I ended up with a sugar paste so I needed something to water it down. Next time I will try to make them with no oil and just egg whites. I also decreased the ceyenne pepper as I thought it was a lot and they ae plenty spicy. This is a keeper in my recipe box. Thanx for sharing.

Chocolate Banana Bread Pudding

Reviewed: Apr. 27, 2009
Okay so this recipe deserves five stars as I barely followed the recipe and it still turned out good. Firstly I barely ever make a dessert or any dish for that matter without trying to reduce the fat. I used skim milk, egg whites, 1/3 cup Splenda, added cinnamon, and used homemade white bread that was starting to turn stale. I threw mine in a 2qt baking dish at 350 for about 45-50 minutes and it came out moist and delish. To tell you the truth I never wanted this to turn out as I'm home alone with freshly baked goods. I LOVE banana anything!! I'm sure th original recipe would be AWESOME. Although I unfortunatley have to work hard to keep my figure lol. Thanx for the recipe.

Sauteed Apples

Reviewed: Jul. 21, 2010
SOOOOOOOOOOOOOOOOOOOOOOOOOO GOOD!!! What more can I say? I used two Granny Smith apples, low fat margarine, BS Splenda, and doubled the water and cornstarch. Served this overtop steel cut oats and was delicious. This is a great super easy recipe. I'm curious to see what would happen if I omitted the spice and tried it with different fruit?? Thanx so much for sharing. Def going to the "kepper" box:)

Italian Sausage Soup

Reviewed: Apr. 23, 2009
I really am not a fan of broth-based sopups although I will prepare them but this soup has completely changed my mind. It blows my mind how simple amd delicious it is. I used "Johnson's mild Italian sausage" and oh so yummy!!! I also upped the garlic added a sweet onion, increased the broth to about 2 L, doubled the tomatoes and also added about 1/2 TBSP of italian spices. My hubby thought it was great also. With my changes this soup will feed many many people I have tons of leftovers in the fridge and also froze some. I think I'm going to try adding some kind of starch next time. Thanx for sharing such an amazing recipe!!

Chicken Pot Pie IX

Reviewed: Apr. 5, 2009
This recipe is awesome! I like most didn't follow the recipe exactly. I added a small chopped potato and also added 1 tsp poultry seasoning (next time I would half this)to the white sauce along with garlic powder. I to agree that the trick to this not coming out dry is to mix the sauce with the vegetables and chicken. I am not a pie crust person so I poured the mixture in a 2 L casserole dish and made a topping of 1 cup Bisquick with 1/2 cup milk and 1 egg. Poured it over top and baked at 400 for 35 minutes. Turned out great although next time I will experiment with some different spices. Also want to try roast beef/ham. Thanx for the recipe.
