Quick and Easy Chicken and Rice

Reviewed: Sep. 7, 2010
I made mine with half whole milk and half skim, skipped the mushrooms and added brocolli, cauliflower and celery, cooked half an onion and two cloves of garlic in the butter and used whole wheat flour rather than white. This turned out great, next time I will only add maybe half to a whole crushed garlic clove as it was very garlicky. Don't be afraid to play around with this recipe and see what you can create. Thanx for sharing

Zucchini and Potato Bake

Reviewed: Oct. 26, 2010
This is fantabulous!! I never had any peppers so I replaced them with some sweet onion and mushrooms. This was such an easy but delicious side dish. I would advise though to kepp this covered as my zucchini was done and the potatoes were not. Thanx for sharing. Will make again.

Missy's Candied Walnut Gorgonzola Salad

Reviewed: Oct. 11, 2010
I never had gorgonzola cheese before and I'm not a huge fan. I brought this to Thanksgiving dinner tonight (Canadian) and never received one compliment. I'm giving it 4 stars though because I don't think I enjoyed it because of my own taste preferences. The candied walnuts were sooooo good..although next time I will try a syrup on them and then roast them in the oven to prevent the sugar clumping together. I also agree that you don't need nearly the amount of sugar called for. Thanx for introducing me to candies walnuts these will be amazing on all my salads.

Low Fat Apple Bran Muffins

Reviewed: Apr. 15, 2009
This is an AWESOME recipe!!!! I made mine with half whole wheat flour and used skin milk soured with lemon juice, 1 tsp cinnamon, 1 tsp vanilla, a whole apple grated, and used 1/4 cup splenda brown sugar. They turned out wonderful and for once actually pretty guilt free. I'm going to experiment with some more flavors tonight. Thank you so much for this awesome recipe. Okay so I fooled arounf with this recipe a bit... added white choc chips and pumpkin pie spice, cherry flavored craisons, and also my absolute favorite one banana. I thought the banana natch wasn't going to turn out but I ended up with the most moist delicious guilt-less banana muffins. I just cant tell you enough how great this recipe is. Thank you thank you thank you

Crustless Cheese Quiche

Reviewed: Dec. 1, 2010
This recipe delivers as promised. I used italian sausage I had leftover in the fridge, a potato, some kinda cheese mixture..whatever was in the fridge, green onion, and red pepper. I never had a pie dish so I just used a regular glass baking dish. Mine turned out fantastic it was light and fluffy and oh so good. Even my picky little two year old gobbled it down. Will make again but am going to try some different mixtures. You seriously can't screw this one up.

Sugar Spiced Almonds

Reviewed: Apr. 26, 2009
My hubby loves spicy foods and me not so much. I made this recipe for him and I am very surprised how much I actually enjoy these. They are very very good and I know I will be making these very often for him. They are a healthy grab and go snack. The only thing I did different was I added one egg white as I ended up with a sugar paste so I needed something to water it down. Next time I will try to make them with no oil and just egg whites. I also decreased the ceyenne pepper as I thought it was a lot and they ae plenty spicy. This is a keeper in my recipe box. Thanx for sharing.

One Dish Chicken and Rice Bake

Reviewed: Nov. 15, 2010
Simple as can be. I threw in some frozen mixed veggies and garlic powder and used milk rather than water. I had to cook mine for 15 minutes longer but it was soooo worth it. The chicken comes out moist and delicious everytime. This is my quick go-to meal. Any creamed soup works fab in this. Thanx Campbells kitchen:)

Nana's Pasta Sauce

Reviewed: Oct. 19, 2010
This was unbelievably easy. I used white wine as thats all I had and I decreased the amount a bit. I also added some extra spice. I had a cold when I made this and had the hardest time tasting it lol. I fed it to a large groups of women and they all said it was delish. Thanx will make again.

Sausage Sauerkraut Supper

Reviewed: Aug. 4, 2010
My hubby is a huge fan of sauerkraut so he loved this recipe. Next time I will be sure to rinse the sauerkraut better as I had a little to much liquid and I also will put the kraut on top so the flavour really sinks into the sausages. Oh and this makes enough to feed a small army so beware I have a enormous crock pot and it was full to the very top.

Tex-Mex Burger with Cajun Mayo

Reviewed: Aug. 8, 2010
I followed this recipe EXACTLY..which is a first for me. I'm only giving this three stars because it never blew my mind. Yes these burgers are tasty but I couldn't taste any of the cajun spice or jalapenos. This tasted like your everyday homemade burger nothing more nothing less even the cajun mayo tasted like something that just was there to moisted the bun. I may try this again with a different brand of spices and def increase the spince and jalapenos. Thanx for sharing.

Fluffy Cake Doughnuts

Reviewed: Jul. 24, 2010
This is the EXACT same recipe that came with my mini donut pan the only differencr was 2 TBSP butter melted. I tried that one 3 times and I wasn't to impressed with the results. So I played around with this one. 1 and 3/4 cup flour (no subs, I tried) 3 eggs, 2TBSP butter melted. I skipped the icing and brushed mine with melted buter and dipped in cinnamon sugar. With these changes my donuts were much better. If your expecting a light airy donut then you better go to Timmies as these are not that..more of a homemade bun texture. Best eaten when hot from the oven.

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: Apr. 29, 2009
I also don't really understand why this is called "mock coconut pie" there is no coconut flavor in the ingredients. That being said I omitted the lemon and vanilla and added approx 3 TBSP of coconut flavor Da Vinci Gourmet syrup, made mine with 1/2 cup Splenda and used 2 egg whites and one whole egg. I skipped the crust and just put it in a 2qt casserole dish and baked for 40 minutes and then turned my broiler on high for an extra 5 minutes and it came out very good.Kinda like a custard/pudding. Thanx for such a great recipe idea. So creative!!!

Honey Curried Roasted Chicken and Vegetables

Reviewed: Aug. 3, 2010
I roasted my veggies in a separate small roaster with some garlic, salt and pepper, and a splash of chicken stock @ 400 for about 40 minutes give or take. I just poured half the curry sauce over each about 10-15 minutes before the chicken was finished. The chicken was moist, juicy and tender. Ummmm good. There will def be a next time although I want to add a little coconut milk to the sauce. MMMMMMMM good
