Pistachio Crusted Chicken

Reviewed: Nov. 11, 2013
I used pecans rather than pistachios and it was delicious! I think I need to play with the spices a bit next time. Try it, you won't be disappointed:)

Crustless Cheese Quiche

Reviewed: Dec. 1, 2010
This recipe delivers as promised. I used italian sausage I had leftover in the fridge, a potato, some kinda cheese mixture..whatever was in the fridge, green onion, and red pepper. I never had a pie dish so I just used a regular glass baking dish. Mine turned out fantastic it was light and fluffy and oh so good. Even my picky little two year old gobbled it down. Will make again but am going to try some different mixtures. You seriously can't screw this one up.

One Dish Chicken and Rice Bake

Reviewed: Nov. 15, 2010
Simple as can be. I threw in some frozen mixed veggies and garlic powder and used milk rather than water. I had to cook mine for 15 minutes longer but it was soooo worth it. The chicken comes out moist and delicious everytime. This is my quick go-to meal. Any creamed soup works fab in this. Thanx Campbells kitchen:)

Zucchini and Potato Bake

Reviewed: Oct. 26, 2010
This is fantabulous!! I never had any peppers so I replaced them with some sweet onion and mushrooms. This was such an easy but delicious side dish. I would advise though to kepp this covered as my zucchini was done and the potatoes were not. Thanx for sharing. Will make again.

Nana's Pasta Sauce

Reviewed: Oct. 19, 2010
This was unbelievably easy. I used white wine as thats all I had and I decreased the amount a bit. I also added some extra spice. I had a cold when I made this and had the hardest time tasting it lol. I fed it to a large groups of women and they all said it was delish. Thanx will make again.

Cranberry Sauce I

Reviewed: Oct. 17, 2010
I did the 1/2 brown and 1/2 white sugar as per reviewers suggestions. The orange taste was quite strong in this and it never thickened up as much as I would have liked. I'm going to give this another go at Christmas and try some of the other reviewers tips and see if I have any better luck. As always thanx for sharing.

Taco Casserole

Reviewed: Oct. 17, 2010
I added some corn, black beans, skipped the tomatoes as I never had any and replaced with salsa, added only about 1/2can tomato soup and some sauteed orange bell pepper. I don't generally have tortilla chips in my house so I improvised and used some organic wraps and just baked them in the oven until crisp and then crunched them up. I think next time I will do the tortilla thing although I will probably serve them on the side to just dip into. The only downfall is my daughter couldn't eat this as it has some bite to it but that was my fault. Play around with this one and see what you get. Thanx for posting.

Outrageous Chocolate Chip Cookies

Reviewed: Oct. 15, 2010
I used this recipe as a guideline only as I wanted my baby girl to enjoy some chocolate cookies but wanted to skip all the empty calories and fat. I used 1/4 cup maragine fat free stuff with omega 3's, 1/2 c Splenda, 1/2c oraganic sucanant, 1 single serving applesauce, 1c whole wheat flour, 1/2 cup rolled oats. These turned out fantastic and I was happy about giving these to my child. You are what you eat and it feels so good to show my daughter that eating good and healthy dosn't mean you have to eat lots of sugar and fat. Thanx for sharing

Pumpkin Muffins II

Reviewed: Oct. 12, 2010
These muffins are very good. They remind me of Tim Hortons Pumpkin Spice Muffins. I used 2 cups whole wheat, 1/2c rolled oats, 1/2c wheat bran, 1c organic sucanant, 1 single serving of applesauce, 1/4c veg oil, 1 14oz can pumpkin, and a slash a milk. Cooked these at 350 for 17 minutes and they were perfect. I fed theses to my two year old daughter and she loved them. Thanx for sharing such a wonderful recipe.

Missy's Candied Walnut Gorgonzola Salad

Reviewed: Oct. 11, 2010
I never had gorgonzola cheese before and I'm not a huge fan. I brought this to Thanksgiving dinner tonight (Canadian) and never received one compliment. I'm giving it 4 stars though because I don't think I enjoyed it because of my own taste preferences. The candied walnuts were sooooo good..although next time I will try a syrup on them and then roast them in the oven to prevent the sugar clumping together. I also agree that you don't need nearly the amount of sugar called for. Thanx for introducing me to candies walnuts these will be amazing on all my salads.

Quick and Easy Chicken and Rice

Reviewed: Sep. 7, 2010
I made mine with half whole milk and half skim, skipped the mushrooms and added brocolli, cauliflower and celery, cooked half an onion and two cloves of garlic in the butter and used whole wheat flour rather than white. This turned out great, next time I will only add maybe half to a whole crushed garlic clove as it was very garlicky. Don't be afraid to play around with this recipe and see what you can create. Thanx for sharing

Sausage Spaghetti Spirals

Reviewed: Aug. 10, 2010
This is a really easy dinner for those nights you really need something quick. I subbed zucchini for the peppers and tried a variation of cheeses. Thank you for posting as this was the first time this week my two year actually ate her dinner and even asked for seconds.

Tex-Mex Burger with Cajun Mayo

Reviewed: Aug. 8, 2010
I followed this recipe EXACTLY..which is a first for me. I'm only giving this three stars because it never blew my mind. Yes these burgers are tasty but I couldn't taste any of the cajun spice or jalapenos. This tasted like your everyday homemade burger nothing more nothing less even the cajun mayo tasted like something that just was there to moisted the bun. I may try this again with a different brand of spices and def increase the spince and jalapenos. Thanx for sharing.
