Basic British Scones

These scones are light and fluffy. Nannie's Hot Milk Sponge Cake

This cake is a lovely golden brown at exactly forty minutes in the oven. It is, however, too dense for a sponge. The egg whites and yolks should be separated first, to make it lighter. Also, I reduced the sugar by a forth of a cup, added another teaspoonful of vanilla extract, used brown sugar instead and made a chocolate ganache as another reviewer recommended. Do add the one forth cup of butter as it helps greatly. The end result should be a delicious golden brown cake which smells like vanilla and caramel.

Apple Brownies

These brownies are overly sweet, and more apple than brownie. I thought that there were too many apples so I reduced the number to two, but the I realized that there is too little batter, not apples. Also, the amount of sugar should be reduced to set off the sweetness of the apples. Add half a teaspoonful more cinnamon to strengthen the taste and smell of cinammon.However, the taste of this brownie is very good and I shall make this again with said adjustments.

Soft Chocolate Cookies

These cookies are rather soft and cakey. I omitted the confectioner's sugar because the cookies are sweet enough by themselves. I experimented with blueberries, peanut butter and strawberry jam- they are all delicious but the best was the peanut butter. Make a dent in the cookie before baking and put a generous swirl of peanut butter in. You can also put cold creamy peanut butter on top afterwards.
