Butter Icing for Sugar Cookies
Very nice frosting! Tasty, and firms up well enough to transport the next day. It does begin to dry out a bit while frosting, but to soften it back up you can microwave it for a few seconds, or if in stainless bowls put on a low-heat burner for a few seconds (just be careful when handling). Will use again. Thanks for a great recipe!

Special Buttercream Frosting
Let me preface this review by saying that I am a butter girl. I was very skeptical of and reluctant to use shortening in a frosting recipe, but since my last butter-only frosting was a bit disappointing, I decided to just try it. Wow! This recipe produces an incredibly fluffy, delicious frosting that rivals that from any bakery! I used slightly less sugar (~7 cups) and this made enough to frost 24 cupcakes with about 3 cups left over (in the freezer until next time!). As with another reviewer, I kept "sampling" the frosting because I couldn't believe how good it was! And it's not as sickly sweet and overwhelming as frosting made only with butter. Try it, you will not be disappointed!

Butter Icing for Cookies
This is a good basic icing. It tasted pretty good, and spread easily until it started to harden a bit. You could fix this by microwaving at 30% for a few seconds, or if using stainless steel bowls, let them sit on a burner on low for a few seconds. Definitely a keeper!
