Rhubarb Cake I

An easy and delicious cake. Great hot out of the oven, cold the next day, or reheated in the microwave. I can imagine this would be amazing with ice cream, although I did not try that myself. I made this as written, with double rhubarb based on previous reviewer's comments.

Sweet Potato and Avocado Salad

I followed the recipe as written and found it to be very garlic heavy. I consider myself a garlic lover, but this was too much for me. However, I did enjoy this recipe overall and it made a healthy and filling lunch. The warm sweet potato melted the avocado a bit and turned some of it into a creamy dressing/sauce. Next time I will not use the garlic powder, or perhaps only a tiny dash of it. I think something for a crunchy element would be a nice addition, such as some roasted pecans or walnuts. A nice base recipe that will be great for some changes based on personal taste.

2-Ingredient Wheat-Free Banana Pancakes (Paleo)

I did not try these because I personally don't like bananas, but I made these for my children and that is where my rating comes from. One 3 year old said they were good, but only ate one of them (way less than she usually would eat). Another 3 year old picked at them and ate a few bites, then proceeded to only eat strawberries for breakfast. The 9 month old ate it fairly happily, but preferred his oatmeal. Based on these reactions, I don't think I will make this again, but I do appreciate the speediness and convenience of this recipe.

Coconut Chicken Stir Fry

Easy to make and with a different flavor from the usual stir fry. I used carrots, broccoli, and pea pods for my vegetables and used light coconut milk.

Merritt's Butternut Squash Gratin

This recipe was tasty, but I felt there was a little too much cheese/breadcrumb mixture. I think I would prefer to use double the squash amount, or half the topping amount, to let the squash shine through more.

Brownie-Blasted Cookies

I loved the idea of this recipe and the final product was very loved by all who tried them, however, I had to subtract a star because the brownie mix was way too dry as written. It was just powder with a couple wet spots on it; I wonder if there is a typo in the recipe? We added 2 more tablespoons of oil and 2 more tablespoons of water to get it to a batter consistency. I really recommend these cookies, just make sure you add more liquid to the brownie mixture! :)

Sour Cream Chocolate Chip Cookies

I had sour cream that needed to be used up so I decided to try this recipe. I left out the raisins and nuts, and added a little more chocolate chips in their place. We thought these were good, although we prefer my usual chocolate chip recipe. They are soft and puffy, which I expected and was okay with. I think a bit of salt and/or vanilla would be good additions.

Southwestern Calico Corn

I made this as written and I just didn't care for it. I am not sure why. I like all the ingredients and have made similar recipes in the past that I enjoyed (such as Calabacitas con Elote from Allrecipes). I think maybe the amount of chili powder didn't appeal to me? My husband said this recipe was ok, so that is how it got to 3 stars.

Honey and Spice Sautéed Pork Hand Tacos

This was fast and simple to make, and really had a much better flavor than I expected! I was worried the meat would be too sweet, but it was just fine. I used paprika in place of chipotle (noted in the ingredients as an alternative). For my pico, I chopped up some Roma tomatoes, then threw in fresh cilantro, little onion powder, and a dash of salt. We really liked the addition of romaine lettuce for good crunch. The only thing I would do differently is use flour tortillas instead of corn, because my husband said he found the corn tortillas to be a little to dry for his taste.

Hand-Cut Beef Chili and Beans

This chili may be a bit more labor intensive than the standard ground beef or ground turkey chili I often make, but it is so worth it! It is very very delicious and filling. I served it over baked potatoes, topped with a little sharp cheddar, and a side of cornbread muffins. The only thing I did differently was to decrease the cayenne by half because I was concerned too much heat would bother my toddlers. I really recommend trying this yummy recipe!!

Chicken Stir-Fry

This was a fast and tasty stir fry. I had to throw in ground ginger in place of fresh (I didn't realize I had no fresh left). For my vegetables, I used a mix of broccoli, carrots, and corn. This was just a bit on the overly salty side for us, next time I would replace 1/3 - 1/2 of the soy sauce with chicken stock or something similar. Even with it being a little too salty, we enjoyed this.

The Herd's Tailgate Chili

This was a wonderful chili, it had great taste and even the kids enjoyed it. Each kind of bean and the spice blend really worked together to make it very flavorful. I only used one onion because we are not onion lovers. This makes a TON of chili; it barely fit in my biggest stock pot! It was perfect though because I wanted to freeze some, and now have enough in my freezer for 3 more dinners. Thank you for sharing this recipe!

Rhubarb Bread

I wanted to freeze some of these so I made muffins and baked them for 25 minutes at 350 degrees. This recipe makes delicious muffins/bread! The ones that came out of the freezer defrosted perfectly at room temperature and were as tasty as when they were first made. Also, when I made these, I ran out of white flour and had to use mostly whole wheat and it worked well for me.

Trina's Beef Brisket Chili with Cornbread Waffles

Sorry, but this chili did not work out for us. I had really been looking forward to this, so it was disappointing. The flavor was just unusual, and not in a good way. Mixing ranch beans, beer, cocoa, and the other spices together had strange results that we found unpleasant. The redeeming thing about this recipe is the cornbread waffles. They were delightful! I would definitely make those again to serve alongside a different chili.

I made this for my extended family and it was very well received. I thought the flavor was similar to cookies and cream ice cream. Our only complaint is that these were dense and more difficult to cut into squares than we thought it would be.

Healthy Creamy Mac and Cheese

I made this as written, but without the nutritional yeast because I did not have any on hand. I liked it, but my kids wouldn't touch it (not sure why, they had no idea it was cauliflower!) and my husband said it was just ok. The flavor and texture are light, although not quite mac & cheese-like. I don't think it was the recipe writer's intention to "hide" the vegetables, and if that is what you are looking for, I don't think this recipe will help you do that. The flavor and texture of the sauce is not close enough. However, if you like cauliflower and are looking for a lighter and healthier version of the classic recipe, this is a good one to try!

Best Brownies

My daughters and I made these today for their third birthday. They were easy to make and the kids had fun. We made this recipe as written. The brownie itself was pretty good, had a nice texture and flavor. The frosting had good flavor, but was dry and crumbly after settling down on the brownie. We found these to be very chocolaty and rich, a little piece was perfect! I think I would prefer these without the frosting or maybe with a different frosting recipe.
