About this Cook
I am a wife to an amazing husband and mother to three wonderful children: a set of twin girls who are 2 1/2 and a newborn baby boy. I am a stay at home mom. I have always loved to cook for people. It started off with baking when I was younger but I now also cook savory meals as well. I like to try new things and while I occasionally make recipes I have made before, more often than not I am trying something new!
My favorite things to cook
I enjoy making a wide variety of things and I also like to try new foods and methods. My favorites are mexican, italian, and american. I tend to often omit onions from recipes, since hubby and I both dislike them.
My favorite family cooking traditions
When my brothers and I were young we decorated sugar cookies with mom and dad. We have done this a couple times as we have grown up and it is something that I would like to do with my children when they are older. Also my mom makes great polish meatballs and those are normally only on holidays, so I guess I would call that a tradition too.
My cooking triumphs
Anytime I make something my husband comments to me that he likes, and especially those recipes he asks me to make again.
My cooking tragedies
A number of years ago, I was using the grill and lit all my chicken on fire. I didn't have much experience with grilling at the time and I have practiced a lot since. I have now become a pretty good griller, although I would not say it is my very strongest skill.

Rhubarb Cake I
An easy and delicious cake. Great hot out of the oven, cold the next day, or reheated in the microwave. I can imagine this would be amazing with ice cream, although I did not try that myself. I made this as written, with double rhubarb based on previous reviewer's comments.

Sweet Potato and Avocado Salad
I followed the recipe as written and found it to be very garlic heavy. I consider myself a garlic lover, but this was too much for me. However, I did enjoy this recipe overall and it made a healthy and filling lunch. The warm sweet potato melted the avocado a bit and turned some of it into a creamy dressing/sauce. Next time I will not use the garlic powder, or perhaps only a tiny dash of it. I think something for a crunchy element would be a nice addition, such as some roasted pecans or walnuts. A nice base recipe that will be great for some changes based on personal taste.

2-Ingredient Wheat-Free Banana Pancakes (Paleo)
I did not try these because I personally don't like bananas, but I made these for my children and that is where my rating comes from. One 3 year old said they were good, but only ate one of them (way less than she usually would eat). Another 3 year old picked at them and ate a few bites, then proceeded to only eat strawberries for breakfast. The 9 month old ate it fairly happily, but preferred his oatmeal. Based on these reactions, I don't think I will make this again, but I do appreciate the speediness and convenience of this recipe.
