Perfect Ten Baked Cod
FABULOUS recipe!! The flavors were just the perfect combination--the lemon, butter and white wine obviously the most important. Wow! I've done lemon and butter before (who hasn't?) but I had no idea what I was missing by not adding white wine in the mix! The ritz crackers were great also. I didn't measure the ingredients, but I did eyeball them and try to keep the proportions about the same as called for. The only actual change I made was that I didn't have green onions or parsley to garnish with, so I omitted them.

Oregon Salmon Patties
I made these as written, except for a couple minor changes. I added lemon pepper and garlic to the seasonings. I also substituted coconut flour for the bread crumbs, because my daughter is gluten free. Coconut flour behaves differently, so I added a little at a time and stopped when it looked about right. I also used coconut flour for the coating. Refrigerating helped, but wasn't necessary. I cooked the first two right up because we were hungry, and they were fine. The other four I refrigerated till we were done. They held together better, but I wouldn't hesitate to skip refrigeration if I was in a hurry.

Lemon Sauce for Salmon Patties
This was a very easy, basic recipe!! I did make a couple changes. First, I used coconut flour instead of regular flour, because my daughter needs gluten free. Coconut flour goes farther, so I just eyeballed it and added till it looked like enough. I didn't have any lemons, but really wanted a citrusy topping for my salmon patties. I substituted lime juice. Obviously these two changes effected the flavor--but based on the way it turned out, I know this would work well with the original ingredients as well! I'll definitely be using this one again (hopefully with lemons next time!)
