Cheddar Baked Chicken

Okay, I wasn't sure about this recipe because I can never seem to get breaded chicken breast to cook up crispy in the oven. But it turned out great! The flavor was fantastic and it was very crispy! I coated my baking dish with PAM and my bottom crust still stuck but that's okay! It was still good. I added a few extra sprinkles of cheese on top of each breast and that really helped give it a golden brown crust on top. I took the advice of some other reviewers and baked mine for 45 minutes which I think was too long. It dried out the chicken just a tad. This was a very good weeknight meal and my husband loved it! Nothing but oohs and ahhs at the dinner table tonight!

Fluffy Pancakes

Oh. My. Word! These pancakes were heavenly! The taste and texture were perfect! I made the batter the night before. It was a little thick at first, I contemplated adding more milk. Don't do this!! The thickness adds to the fluffiness. Also, as it sat in the refrigerator, it thinned out just enough to be able to pour it. These are by far the best pancakes ever. I don't think I'll ever go back to boxed pancake mix!!

Slow Cooker Sweet Chicken Chili

This was uh-mazing! My husband loved it! The chicken was so so tender! I did not add the brown sugar because I didn't have any, and I didn't add the rice vinegar because I didn't think I'd use it again if I bought a bottle, and I couldn't find the black bean sauce. With all those omissions, it still turned out terrific! I added a can of tomatoes and green chilies and it gave it a mild spice that was to die for! Will definitely make this again!

Grilled Salmon I

Oh. My. Gosh! This was delicious! I would've followed the recipe as written BUT I was looking for a recipe at the last minute and I could only marinate the fish for 1 hour. It was so flavorful, I can only imagine what it would've tasted like had I marinated it completely! I loved the flavor that the soy sauce gave it, the brown sugar was perfect and next time I'll use more garlic powder. This was just absolutely wonderful served with steamed veggies!

Sugar-Free Peanut Butter Cookies

This recipe was quite good but not the traditional peanut butter cookie. My husband is diabetic so obviously he is used to the taste of artificial sweeteners and I'm not! They were a little bit crumbly but after all they are flour-free, baking powder-free cookies and the only thing binding them together are the eggs. I did modify it a bit. I added vanilla because I just can't make cookies without vanilla! Also, when forming your cookies it's best to measure out tablespoonfuls and roll them into balls, I found that this makes the cookie less crumbly.

White Chocolate Blondies

This recipe is amazing and so easy to make! I read the reviews and I also used white chocolate chips and melted them with the butter in the microwave. It melted perfectly! The semisweet chocolate chips were a little too bitter and I could barely taste any white chocolate. Next time I will substitute white chocolate for semisweet. Also these are best when completely cooled, preferably overnight. They taste great the next day!
