Cherry Dump Pudding

Good recipe. I made this for my son's 8th birthday and he loved it. His is the last of three of our family birthdays within 3 weeks, so this was a nice change from birthday cake. Good with fresh real whipped cream.

Easy, Cheesy Zucchini Bake

This was such a good, simple and nutritious recipe. I did omit the corn, added onion, garlic, and italian seasoning, and served it over large macaroni noodles to increase the kid appeal. My kids refuse to eat zucchini, but they tried it and admitted that it was pretty good. The zucchini takes on the flavor of the sauce. Had the leftovers for lunch today and they were great! I will make this again.

Spinach Stuffed Chicken Breasts

Good mix of flavors. I found it a little salty due to the bacon and feta, but still very tasty. It helped to serve it with plain pasta to mellow the flavor. My husband and kids liked it too.

Apple Butter Pork Loin

Good. I used a 3# pork loin roast and it worked great. The apple flavor goes very well with the pork and the kids loved it. The apple juice makes a nice sauce when it is done. I will make again.

Pork Chops and Scalloped Potatoes

A very good and easy way to make pork chops. My family loved this. I did cook the potatoes for a 1/2 hour before adding pork chops and saved a little sauce for pouring over. I will make this one again!

Party Chicken I

This is good, very rich. It was a little salty because of the bacon and soup (and I even used the low sodium soup), but everyone still loved it - even the kids! I will make this again.

Yum! I knew my husband and I would love these , but was surprised when my 7 & 3 year old kids loved them too. I did make a substitution using ground buffalo instead of ground beef - had to add a little olive oil to prevent it from getting dry. I did add onions and garlic too and brushed with some melted butter when they were done. I will be making these again.

Creamed Salmon on Toast

Great comfort food! My mother used to make this. I did use leftover grilled salmon instead of canned. I also added some finely minced onions and parsley in the sauce for added flavor. I substituted frozen peas for canned too. My husband had never eaten this before and he loved it. I will start making it again!

Eastern Rice Salad

Great salad! Took it to a party last night and everyone loved it. I did make some changes based on our families preferences. I omitted the celery, green pepper, and bean sprouts. I used low sodium soy sauce and added about 1/2 tsp. sesame oil to the dressing. I added twice as much red pepper, 1/2 small can water chestnuts, a few pea pods, and a small can of mandarin oranges. I used only about 3/4 of the dressing - which was plenty for us. I loved the spinach and cashews in this salad. The kids even loved this salad! I will definitely make it again!
