Coconut Macaroons III

I had some shredded coconut left over from making my sweet tamales for the holidays and gave this receipe a try. It's very easy to make. A little to chewy for my taste.

Sweet and Spicy Almonds

Wow! So simple.. Since I didnt't have all the ingredients, I substituted sea salt for the kosher salt and sage honey for the plain honey. It is definitely addictive and not too spicy, just the right kick. Other than that, I followed the rest of the recipe.

Refreshing Lemonade

I've made this over and over. Even the reluctant, anti-sugar free people love this lemonade. I love it over crushed ice. Yummie!!!

Wonderful Fried Fish Tacos

I was expecting a fluffy crispy batter and was I disappointed. Although I seasoned the flour because of other recommendations, that did not help. After coating and cooking the tilapia, the consistency of the batter was thick and blah. Won't try this again.

Buttercream Icing

Glad I tried it. I don't like very sweet icing so I tweaked a few things because of previous reviews. I ended up eliminating the 1/2 cup shortening and replacing it with butter, 2tsps. of vanilla, 2 1/2 cups of confectioner's sugar and 4 tbs. of milk. I was able to frost an entire bundt cake with this recipe.

Bacon Wrapped Dates Stuffed with Blue Cheese

This was a great appetizer and none were left by the time we had dinner. I basically used the same recipe but substituted cream cheese for the blue cheese and also baked another batch without the cheese. I prefer the pitted Deglet Noor dates because of the great combination of flavors. I tried the Medjool dates but they needed to be pitted and they were a little too meaty. To me, the combination of flavors with the Medjools didn't come through. It's a very quick recipe so try it at least once.

Extreme Banana Nut Bread 'EBNB'

I'm not a baker but made this recipe during the Thanksgiving holiday and wow! was I hit with the family. They want me to make more for Christmas and since I'm on such a tight budget, I'm certainly going to give these as Christmas gifts. Directions were easy and recommend that you try this recipe once.Thank you SASEIGEL.
