Janet's Rich Banana Bread

This is sooo delicious. I prefer to try and make healthier food so i sub the butter for olive oil, use 1 c. white whole wheat flour 1/2 c. all purpose flour and use about 1/2 c. sugar plus some chocolate chips for the kids. These make great muffins, they cook in about 15-18 minutes at 350. Much faster than the one hour for a loaf.

Quinoa and Black Beans

this was delicious and so easy! It seems to be a pretty flexible recipe as to what you can add to it, I threw in frozen peas with the corn. It comes out a little mushy but I love it that way, if you prefer drier use maybe 1/2 cup less liquid.

Creamy Banana Bread

Great recipe. I usually don't use a recipe more than once but this is a keeper. For those who said it lacks flavor, add more bananas. I use about 4 bananas, no measuring. Some cinnamon, nutmeg. I don't make the middle layer but this is still delicious. Didn't have any butter once and substituted olive oil and it still came out great (healthier too). Add some chocolate chips for the kids but they love it without choco chips also.

Easy Indian Butter Chicken

This is sooo good I just ate dinner and had to write a review! I used 3lbs chicken thighs, (big family) doubled the spices. No cayenne pepper so i put 1tsp of chili powder. Used a 28oz can of crushed tomatoes, 2 cups of whipping cream 1 cup of 2% milk. Sautee onions and garlic, then added a few tbsp of tomato paste. Didn't use butter at all because didn't have any (olive oil instead). Add spices to carmelized onion and sautee a few min., add raw chicken and cook everything together 5-10 min. Add crushed tomato, cream/milk and simmer on low an hour. WAS SOO GOOD with basmati rice. Try it.
