Cauliflower-Cheese Soup

I agree, it was good, but I found it a bit bland, and the texture of the cheese totally changes when reheated, even on the stove. I can see it being great for kids though who don't usually like overpowering flavors.

Homemade Focaccia Bread

This is a good recipe not only for focaccia, but I also have used it for pizza dough, just rolling it out thinner. I also put italian seasoning and extra rosemary in the dough itself, and when making it as bread, I brush it the last couple minutes with butter, onion powder, fresh minced garlic, extra virgin olive oil, italian seasoning, and kosher salt for AWESOME garlic breadsticks.

Baked Paprika-Parmesan Chicken

This is one that lives in our hall of fame. Hubby LOVED it and even asked for it again for the next week. It's not as messy as the directions sound like it would be, and it was totally worth the minimal effort. :)

Crispy Barbequed Tofu Slices

I see potential in this recipe, but my tofu didn't turn out crisp at all. It was mushy even after the freezing and frying of it first. I will have to tweak at it a bit to see if I can't get firmer tofu in the end.

Eggplant Tomato Bake

This was pretty good. My hubby and I both chowed down, and it reheated alright, but I think it needs more than just eggplant in the veggie department. Maybe some mushrooms or zucchini would liven it up a bit, but a very good start:)

Thai Curry Tofu

The only modification I made when I cooked it was that I used Hot madras curry powder which turned out awesome in the sauce. This was pretty good, the sauce was great, but I didn't like the tofu in this recipe. I think it was too mushy even using extra firm and freezing for the texture. I would love to try this with chicken for my husband or with portobello mushroom strips for a firmer, meatier texture.

Sizzlin Steak a la Montreal

Broiled Herb Butter Chicken

This is super easy to whip up while making dinner to freeze for lunches for the week. It smells awesome, and the only alterations I make is I add some kosher salt and onion powder and minced onions to the butter baste. I also make a few slits into the chicken to make the baste soak in better and it turns out great and super juicy every time.

Tangy Almond Chicken Kabobs

Hubby liked them, but they didn't turn out so well because it was raining our grill didn't get hot enough. But I took them into the broiler and they finished up ok, but they got a bit dry from the grill. I think they will be better next time with only one cooking method:)

Baked Havarti Chicken

This is one of our hall of famers.. My husband LOVED this and ate ALL of it himself in one sitting. And I even made extras for his lunches! Definitely a keeper.

Apple Glazed Pork Chops

my husband said it was very good and he would definitely eat it again, but it was sweeter than he prefers. I do not eat meat so I personally did not taste it, but it smelled very sweet, but delicious while baking.

Old-Fashioned Vegetable Soup

Overall this was a pretty good soup and my husband loved it, but I did make a few alterations. I added 2 potatoes, garlic powder, extra celery and carrots, kidney beans and oregano and it was very good. It reheated very well without getting too thick and made enough to last the two of us 3 days for lunches and such.

Garlic Shrimp Scampi

I minced my garlic and left it in the butter and MAN did it smell awesome. I didn't use many bread crumbs at all, as the garlic thickened the sauce a bit. But I think I will double the sauce ingredients for the hubby next time. I don't eat meat, but I made this for my husband and he LOVED it. He said he could eat this about once a week. hehe He is normally not a huge seafood fan, but this is a new favorite.

Broccoli Quiche with Mashed Potato Crust

I tried this recipe as a dinner dish. Worked out pretty good, but I did make a few modifications. I added about 2 tablespoons of onion and chive cream cheese when mashing the potatoes and it was awesome. I also put some parsley and parmesan cheese in the egg mixture. The only problems I had with this recipe was that I made it for the first time in an oven I am not used to! My husband chowed down!

Citrus-Marinated Shrimp on the Barbie
