What the ELLE...Baked Egg Rolls

Great basic recipe-- I was pleasantly surprised with the results of oven frying in this recipe. However I preferred to skip the cans and use fresh ingredients such as grated cabbage and bean sprouts. Instead of sugar, I used a bit of sweet chili sauce. I also made a dipping sauce of soy sauce, sesame oil, sesame seeds and sweet chili sauce and we enjoyed these for the main meal. Thanks!

Stuffed Jalapenos with Smoked Gouda and Pineapple

These were SUPER! We cooked them on our new primo grill. It really helped to have the jalapeno stand to keep them standing upright as pictured in my photo. Thanks Lance-- I will be making these again soon!

Curried Chicken and Rice Salad

Great salad! I used plain yogurt instead of sour cream with good results- I may try nonfat plain yogurt next time and maybe slightly less rice as suggested.

Marinara Sauce

I added sliced baby portabellos as I was sauteeing the garlic at the beginning of this recipe and I think it was a good addition for a change. Great Recipe!!!

Pineapple and Apricot Skillet Chicken

I loved this recipe- I used mango instead of apricot and used 1 jalapeno for a little hot- and what a great mix with the sweet----------yummie and thanks. Oh and I also used orange marmalade cuz I didn't have fresh orange for zest--------

Cyndi's Shrimp Fajitas

Very good recipe-- Can be altered I think to taste and ingredients on hand-- I added cherry tomatoes towards the end and a fresh ear of corn--and served with sliced avocados and salsa. What I liked especially about this recipe was the marinade and the delightful taste it gave the shrimp.

Ginger Crab Cakes

Wow these are definitely the best I have ever made! Also they are Fancy restaurant quality! I made a yogurt sauce with lime and more cilantro as my husband likes sauces. Also as I was dipping the cakes in the egg/bread crumb mixture I patted an ever so slight amount into the cake thus holding it together better. I also used french bagette for the crumbs and served the leftover cakes (it was just the two of us) on toasted bagette the next day for lunch. Fantastic recipe!!

Thai Beef Salad

This comes very close to one we love at an authentic Thai restaurant . I cut down a tad on the mint and cilantro and used london broil that I had thrown on the grill the night before with another entree. Saves lots of time and energy! Thanks for a great recipe Mick!

Easy Baked Ham

We served this as a holiday meal and really liked the overall flavor that the ginger ale, pineapple an brown sugar(I cut back a little) provided. I also liked the fact that I could trim the fat prior cooking---- quite delicious actually!

Thai Grilled Chicken with Sweet Chile Dipping Sauce

Yummy-- I did make some changes-- used plain yogurt in place of coconut milk in the marinade. I also preferred to leave the breasts whole for grilling. Also, I used ground fresh chili paste which may be similar to minced chili. Very good recipe with the sauce being particularly delicious-- thanks.

Italian Sausage and Vegetable Roast

Great taste-nutritious- easy... what more can you ask for? I used hot italian sausage and removed casing and also tossed all in a little olive oil before baking- I also served with couscous instead of polenta. Just a delicious recipe but do not leave the fennel out-- this makes the dish!

Eggplant Mixed Grill

I served this as a meatless meal over spaghetti with feta cheese-- added tomatoes to the mix as well-- very nice seasoning with the herbs- also added a little more balsamic and olive when cooked- great!

Tomato Gorgonzola Soup

WOW--- this had a wonderful flavor! I had no orange juice on hand so I freshly juiced an orange which was about the right amount. I actually loved that part as opposed to lemon for a change. This is a real keeper!
