Pico de Gallo Chicken Quesadillas

Great recipe and really quite low in fat content .The pico (salsa) really gives it a fresh, delicious taste!!! I used the plate method to turn and it worked like a charm.

Curried Chicken and Rice Salad

Great salad! I used plain yogurt instead of sour cream with good results- I may try nonfat plain yogurt next time and maybe slightly less rice as suggested.

Giant Stuffed Mushrooms

I think the concept of this recipe is great but the taste of kasha we didn't like. It has a weird taste and smell!!!(and there are not many healthy foods we don't like!) Next time I would use couscous or bulgar wheat which we love.Thanks for the basic recipe though.

Black Magic Cake

What a great moist, easy, not too sweet cake. Why not serve with a dollop of fresh whipped cream like I did? But don't leave out any of the sugar, it's just right.

Ginger Crab Cakes

Wow these are definitely the best I have ever made! Also they are Fancy restaurant quality! I made a yogurt sauce with lime and more cilantro as my husband likes sauces. Also as I was dipping the cakes in the egg/bread crumb mixture I patted an ever so slight amount into the cake thus holding it together better. I also used french bagette for the crumbs and served the leftover cakes (it was just the two of us) on toasted bagette the next day for lunch. Fantastic recipe!!

The Best Double Chocolate Chip Cookie

Wonderful consistency and texture (Chewy). I used one and a half sticks real butter and a quarter cup shortening. The only thing I would do differently next time is try three quarter cup of each sugar instead of full cup as they are a little too sweet for us.
