New Orleans Eggplant Casserole

Cyndi's Shrimp Fajitas

Very good recipe-- Can be altered I think to taste and ingredients on hand-- I added cherry tomatoes towards the end and a fresh ear of corn--and served with sliced avocados and salsa. What I liked especially about this recipe was the marinade and the delightful taste it gave the shrimp.

Thai Grilled Chicken with Sweet Chile Dipping Sauce

Yummy-- I did make some changes-- used plain yogurt in place of coconut milk in the marinade. I also preferred to leave the breasts whole for grilling. Also, I used ground fresh chili paste which may be similar to minced chili. Very good recipe with the sauce being particularly delicious-- thanks.

Spinach and Potato Frittata

We like this recipe a lot-- can easily be adjusted to ones taste-- I especially like the fact that it does not call for a large quantity of cheese-- more healthy! A double frittata pan makes it much easier! We serve with fresh salsa!

French Spring Soup

Great combo-- Rather than garlic or mushrooms I added bayleaf(very French) and I had arborio rice on hand and of course the broth for flavor-- thanks for a great soup recipe!

I served this as a meatless meal over spaghetti with feta cheese-- added tomatoes to the mix as well-- very nice seasoning with the herbs- also added a little more balsamic and olive when cooked- great!

Stuffed Jalapenos with Smoked Gouda and Pineapple

These were SUPER! We cooked them on our new primo grill. It really helped to have the jalapeno stand to keep them standing upright as pictured in my photo. Thanks Lance-- I will be making these again soon!

Gypsy Soup

We really LOVED this soup. The interesting spice combo really made it come alive! I added 2 or 3 peeled and chopped golden potatoes and used a can of diced tomatoes in lieu of fresh-- also added cilantro for garnish. Yummy-- we didn't even miss the meat!

Tomato Gorgonzola Soup

Easy Baked Ham

We served this as a holiday meal and really liked the overall flavor that the ginger ale, pineapple an brown sugar(I cut back a little) provided. I also liked the fact that I could trim the fat prior cooking---- quite delicious actually!

I loved this recipe and here are the changes I made: I used leftover chicken, added jar style roasted red peppers for color, and panko crumbs on top in addition to the parmesan cheese.

Feta Pesto

One of, if not the best pesto recipe I have ever tried-- just a GREAT combination of flavors. I left out the artichoke hearts but will definitely add them next time. I will be making this one again soon -- thanks!

Tuscan Soup

I really liked this and decided to add some ground anise for italian zip-- ground fennel or actual fennel bulb would be a nice addition if no anise.. Thanks for the great recipe-- I beleive actually a version of italian wedding soup.

Moroccan-Style Stuffed Acorn Squash

What a delicious meatless and healthfull recipe! I substituted bulghar wheat for couscous as I was out of couscous-- great still! I believe this recipe could be altered with different beans( even green peas), different veggies and still shine--thanks for sharing!

Crispy Potato Wedges

Great -- more like oven fries than wedges because of the small size-- I think size is the key to crispiness though and these are nice and crispy! I did use peanut oil. Thanks for a great recipe!
