Grilled Fish Tacos with Chipotle-Lime Dressing
Awesome! Picky boyfriend loved them. I didn't marinate the fish due to time and forgetfulness, instead baked it in the marinade mixture periodically basting, and it turned out great. Warmed up the whole wheat tortillas before adding the fish, then topped with cabbage, shredded carrots, dressing from recipe, fresh lime juice, chopped tomatoes, and fresh avocado. YUM!! Definitely a hit. :)
