Creamy Hollandaise Sauce

Reviewed: Mar. 4, 2012
This turned out really well, and I didn't even measure everything exactly. I used a bit less butter and lemon juice. I don't have a double-boiler, so I stacked two of my deepest pans. Excellent recipe!

Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano)

Reviewed: Aug. 24, 2013
This was fabulous! I halved the spicy components since I'm a bit of a wuss, but it still had a decent bite to it. I also did not have any celery, but the flavors were wonderful and I didn't miss it, with the crisp cucumber. I also added some minced garlic, as another reviewer suggested. I think I might add some more shrimp next time, as I like a lot of it, but the nice thing about this recipe is that it's easy to alter to taste. Will definitely make again, soon!

Absolutely Best Brownies

Reviewed: Dec. 16, 2011
These came out pretty well! Not mind-blowing, but a lot better than most of the other highly-rated brownie recipes I've found on this site. These actually were kind of fudge-like. I added some chocolate chips and they came out well.

Good Old Fashioned Pancakes

Reviewed: May 16, 2012
This recipe was indeed salty, as some others have said, but since I only had self-rising flour on hand (which includes salt), I omitted the additional teaspoon. If I had regular flour, I'd probably suggest using about half the salt indicated. I also ended up having to add another 1/4 cup of milk after pouring the first pancake onto the skillet, as it was too thick to properly spread out. I would suggest adding small amounts of milk at a time until the batter reaches your preferred consistency, but add at least a little extra liquid so the pancakes will cook properly. With these alterations, the pancakes turned out well, and I would make them again.

Quick and Easy Brownies

Reviewed: Dec. 8, 2011
These brownies came out very dry and cakey, and I did not overbake them. I used only one cup of flour, as others suggested, so I don't even know how the 1.5 cup recipe would come out. Sorry, but they just weren't that good, and unfortunately, now I have a huge batch of so-so brownies that I don't want to even give away, lest people associate me with them.

Rich Chocolate Frosting

Reviewed: Mar. 31, 2012
This was WAY too sweet. I should've checked out the other reviews, not just the ones on the top, before using this. I will not make this again. It completely overpowered the cake, and took it from something that was supposed to be rich to just plain sugary and bad.
