Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano)
This was fabulous! I halved the spicy components since I'm a bit of a wuss, but it still had a decent bite to it. I also did not have any celery, but the flavors were wonderful and I didn't miss it, with the crisp cucumber. I also added some minced garlic, as another reviewer suggested. I think I might add some more shrimp next time, as I like a lot of it, but the nice thing about this recipe is that it's easy to alter to taste. Will definitely make again, soon!

Good Old Fashioned Pancakes
This recipe was indeed salty, as some others have said, but since I only had self-rising flour on hand (which includes salt), I omitted the additional teaspoon. If I had regular flour, I'd probably suggest using about half the salt indicated. I also ended up having to add another 1/4 cup of milk after pouring the first pancake onto the skillet, as it was too thick to properly spread out. I would suggest adding small amounts of milk at a time until the batter reaches your preferred consistency, but add at least a little extra liquid so the pancakes will cook properly. With these alterations, the pancakes turned out well, and I would make them again.

Creamy Hollandaise Sauce
This turned out really well, and I didn't even measure everything exactly. I used a bit less butter and lemon juice. I don't have a double-boiler, so I stacked two of my deepest pans. Excellent recipe!
