Broccoli Cheese Soup V

We have family cooking night at my mom's house every Tuesday night. Last week, we decided to give this soup a shot, and it turned out great. It wasn't as thick as we expected it to be when it was done, but it tasted wonderful. If you let the soup sit for a while, it does end up thickening up though. This recipe is definately a keeper! I used the largest Velveeta cheese block that I could find, and added all of it, which happens to be more than what is called for in the recipe itself. I also used one whole bunch of broccoli (stems chopped up too). I boiled the broccoli first, and then added the other ingrediants to the pot. Thanks! 1/17/10 - this is the second time that I'm making this soup, and the only thing I changed was to add another 1/2 lb cheese to the mixture...it is so yummy!

Blondie Brownies

I made these last night as a surprise for my sister-n-law and the rest of my family (who didn't know what a blodie was)and they came out wonderful. We ate them with sugar free vanilla ice cream and a touch of carmel. They were perfect. I printed out the recipe for my sister-n-law, and I will keep this recipe in my recipe box! It is definately a keeper! Thanks...

Chicken Scampi II

I loved this recipe. My husband loved this dish over rice and peas, and since i'm a low carb dieter, I ate it right off the plate, with a side of peas. Very tasty; will definately make again!

Classic Butter Cookies II

My brother wanted me to make raspberry tarts for him (lindzer tarts), and he specifically told me not to make anything too sweet. This recipe was perfect for the cookies. They came out great, and he wants me to make more for the upcoming Easter Holiday. Thank you for a great recipe Heidi!

Classic Tiramisu

The whole recipe (for ingrediants) was PERFECT!! I made it for my brother a few weeks ago for his birthday (because he never tried classic tiramisu before), and he loved it. He liked it a lot, and told me that he thought it wasn't too sweet. I was a little nervous about the egg mixture at first (I thought that the recipe called for raw eggs in the cream part when whipping, but when I read the recipe through, I saw that they are cooked with the sugar for 10 minutes). Definately let the egg/sugar mixture cook through before whipping; also make sure to use the double boiler (you can use a medium sized metal or glass bowl on top of a medium sized pot of water if you don't have a double boiler). Also, instead of refigerating the cake when completed, I put it in the freezer overnight, because the cream wasn't firm...other than that, the recipe is great! Thanks Carol, and I will keep the recipe in my recipe box! :)

Beth's Spicy Oatmeal Raisin Cookies

This year, I decided to make cookies for my co-workers; I'm stacking them, wrapping them in cellophane topped off with a big sparkly bow...and these were the cookies I chose to do that with! I did have to test the recipe out first though, and I must say that this is an amazing cookie. I followed the recipe exactly, and substituted nothing; the only thing was though, I needed really big cookies, so instead of dropping this dough by teaspoonfuls, I took a hunk of it in my palm, patted it into a ball, and baked on parchment paper for 19 minutes at 350 degrees.; I baked 6 at a time (you should have enough dough for 12 cookies this way). After 19 minutes, when they come out, they might look a little under baked, but leave them sit for 10 minutes and they basically continue to bake on the cookie sheet (even out of the oven); they will also firm up some as well. Your end result after taking these steps (for the giant cookies) is a soft and chewy centered cookie, that has a bit of a crispy outer...so perfect! Thank you so very much for this recipe; I will make these over and over again; they are just too good...can't wait to give them away as gifts!

Chuck's Favorite Mac and Cheese

This was good great recipe...I doubled the recipe, but added slightly less cottage cheese than the recipe called for; I also added 2% milk and more of the cheddar and parm cheeses on top, then the breadcrumbs on top of that. I did cut the breadcrumb mixture in 1/2 as well. My hubby and I enjoyed it very much; and I'm taking leftovers to my brother to taste! I'm sure he will enjoy it! Thanks!!

Banana Crumb Muffins

HOLY MOLY this a yummy recipe! I made it in a loaf pan (regular size), and I baked it at 375 for 48 minutes...everything is 100% perfect with the exact ingredients listed! WOW...thank you...both my husband & I think it is amazing!! (If you look through the pics for this recipe, my pic is # 376.)

Guacamole

OMG this was such a perfect guac recipe. Enjoyed it so much...I used 2 large Florida avacados...(there are 2 kinds). So yummy! Thanks! UPDATE: I decided to make this for Easter this year...and I can't wait to have it later, so I'm eating some for breakfast with white corn tortilla chips! Haha...I did add a total of 2 pinches of cayenne (red pepper), and 1 pinch of cumin to the mixture this time! Unbelievable!! I also used 4 organic avacados, but not the Fl ones, like I previously used, the smaller ones. So yummy!! What a great recipe!

Sopapilla Cheesecake Dessert

This recipe was perfect; I just added 1 egg to the cream cheese mixture to make sure the filling would hold together. So yummy...I brought this into work for a birthday party we had, and they were gone within seconds. Today, I am making them again, but I'm adding a layer of cherry pie filling before the final top layer...thought it would be the perfect dessert for our Memorial Day Weekend BBQ! :o)

We had an Apple Pie baking contest at my house; this was a hit. I followed the recipe exactly, but substituted vanilla extract for some of the water (1/4 tsp to be exact). Everyone loved it.
