Royal Icing I

This icing was great on my gingerbread cookies for Christmas...it dried quickly. The only thing I would do is add another 1/2 to 3/4 cup confectioners' sugar after beating the mixture at high speed. After making my first batch of icing, I saw that the it was a little runny; by adding the extra confectioners' sugar, it stiffens it up some. It had a nice light lemony taste to it to, which went great with the gingerbread cookies I made this past year. Also, if you are adding food coloring to the icing, I would add a little more confectioners' sugar after doing that as well...thanks, and I will keep in my recipe box to make in the future! :)

Classic Tiramisu

The whole recipe (for ingrediants) was PERFECT!! I made it for my brother a few weeks ago for his birthday (because he never tried classic tiramisu before), and he loved it. He liked it a lot, and told me that he thought it wasn't too sweet. I was a little nervous about the egg mixture at first (I thought that the recipe called for raw eggs in the cream part when whipping, but when I read the recipe through, I saw that they are cooked with the sugar for 10 minutes). Definately let the egg/sugar mixture cook through before whipping; also make sure to use the double boiler (you can use a medium sized metal or glass bowl on top of a medium sized pot of water if you don't have a double boiler). Also, instead of refigerating the cake when completed, I put it in the freezer overnight, because the cream wasn't firm...other than that, the recipe is great! Thanks Carol, and I will keep the recipe in my recipe box! :)

Zucchini Pasta Bake

I wanted to make my husband something new last night, and I chose this recipe. He liked it, and told me that he would rate it 4 out of 5 stars (I am currently dieting, so I couldn't eat this). I did take the last person's advice (who commented on the recipe) about adding a can of cream of chicken soup to the mix, and also adding a meat product to the mix...I added sauted ground beef though, not sausage. I think that without adding the can of soup, the recipe would have been dry. Thanks, and I will keep this in my recipe box.

Classic Butter Cookies II

My brother wanted me to make raspberry tarts for him (lindzer tarts), and he specifically told me not to make anything too sweet. This recipe was perfect for the cookies. They came out great, and he wants me to make more for the upcoming Easter Holiday. Thank you for a great recipe Heidi!

Blondie Brownies

I made these last night as a surprise for my sister-n-law and the rest of my family (who didn't know what a blodie was)and they came out wonderful. We ate them with sugar free vanilla ice cream and a touch of carmel. They were perfect. I printed out the recipe for my sister-n-law, and I will keep this recipe in my recipe box! It is definately a keeper! Thanks...

Broccoli Cheese Soup V

We have family cooking night at my mom's house every Tuesday night. Last week, we decided to give this soup a shot, and it turned out great. It wasn't as thick as we expected it to be when it was done, but it tasted wonderful. If you let the soup sit for a while, it does end up thickening up though. This recipe is definately a keeper! I used the largest Velveeta cheese block that I could find, and added all of it, which happens to be more than what is called for in the recipe itself. I also used one whole bunch of broccoli (stems chopped up too). I boiled the broccoli first, and then added the other ingrediants to the pot. Thanks! 1/17/10 - this is the second time that I'm making this soup, and the only thing I changed was to add another 1/2 lb cheese to the mixture...it is so yummy!

My Crab Cakes

I made these crab cakes for dinner (for myself)last night, and I liked them. They were spicy though. If you like spicier ingredients added to your seafood, you will love these. I followed others who said to add 2 eggs instead of 1, and double the old bay beasoning. I thought the filling was a little wet after mixing it together, so I added a 1/2 cup plain bread crumbs. They came out very nice. I had no cayenne pepper on hand, so I substituted red pepper in its place. Thank you for a nice recipe!

Roasted Garlic Bread

This is a very different garlic bread. The roasted garlic gives this recipe a completly different taste. After mixing all the ingrediants for the spread, I found that it was very pasty. My whole family agreed that it wasn't the greatest garlic bread that we've had. If you like a thicker garlic spread for the topping and you like roasted garlic, then you will love this recipe. I just wanted to try the recipe out, but was not happy with the results. Sorry about the negative feedback.

Creamy Deviled Eggs

Although a lot of other people liked these deviled eggs, I didn't care for them very much at all, and neither did my boyfriend. We did not like the pickle taste in the filling. When I filled the egg whites with it, they were very messy looking; not a good presentation at all. The filling was runny, and when I tried to pipe it into the egg whites,it would not hold shape from the large star tip. I don't even know why I'm giving this recipe 2 stars, but I am. I'll have to find another deviled egg recipe that suits my taste.

Jimmy's Mexican Pizza

I made this last night for my boyfriend's dinner, and he loved it. The only other thing that I did was double the meat, onions and refried beans; I made a double layer of this filling, and added 1 more tortilla to the top. (3 altogether). This really came out wonderful. Thank you Jimmy for a wonderful recipe!

Pumpkin Cookies I

I was very excited to make these cookies because they're different. There are two things I would like to say about them. First, I would omit the butterscotch morsels. The cookies were too sweet with them added in. Just the pumpkin flavor alone is nice, without the sweetness attached. Second, for some reason, when I put them in the oven, they wouldn't spread while baking; they stayed in large clumps on the cookie sheet. I'm pretty sure all the measurments were correct. Overall, the cookie did taste good, just not great. I will work on this recipe again, and hopefully in the future, they will come out better. Thanks M.J..

Gerry's Chicken Enchiladas

I made these for a surprise dinner for my boyfriend over the weekend (we both love mexican food) and he loved them. The only thing that I changed in the recipe was the 12 small chili peppers to 4 small chili peppers. Everything else was okay. I made 5 giant enchiladas, and within 2 days, my boyfriend had eaten all of them. Thank you very much Gerry. Very good recipe.

Corn Fritters Southern Style

I served these to my boyfriend as an appetizer; he was the one who rated 4 out of 5 stars. They seemed to be a little light and airy after frying, but he did say they were very good. I used canned corn instead of the corn off the cob. Thanks for a nice recipe Helene.

Allana's Zesty Red Clam Chowder

I made this last night and I think it turned out great. There are some changes, however, that I made. First,I would saute the celery by itself for about 4 minutes before adding any other vegetables to the pot(this would ensure that it wouldn't be still crunchy at the end of simmering). I would not add the bacon; cut the 1/4 tsp of white pepper to 1/8th tsp; instead of 5 drops of hot sauce, only add 3, and before simmering for 20 minutes, add 1 1/4 cup of hot water, to make it more of a soup/chowder consistency. Without adding the water, it would have been way to thick and chuncky for me. Overall, my whole family was impressed. Thank you Allana for a nice recipe.
