Jalapeno Poppers II

MMMM...Yummy! These are good, but very time consuming (I tripled the recipe)...I can def. see why jala poppers are so expensive when you buy them out and already made; I did add some canned chopped jalapenos to the cream cheese mixture, which I think, made them a little hotter...my husband thought they were outrageously hot (but they weren't). Anyway, I enjoyed them, and I would make them again, only next time, I might leave my own addition of chopped jala OUT, so that my *pussy cat* of a hubby can enjoy them too! Haha! Thanks for the recipe! :o) And yes, use a ziploc baggie (as someone else pointed out) to pipe the filling into the jala.; it is a BIG help in saving time and its so much less messy!

Sopapilla Cheesecake Dessert

This recipe was perfect; I just added 1 egg to the cream cheese mixture to make sure the filling would hold together. So yummy...I brought this into work for a birthday party we had, and they were gone within seconds. Today, I am making them again, but I'm adding a layer of cherry pie filling before the final top layer...thought it would be the perfect dessert for our Memorial Day Weekend BBQ! :o)

Guacamole

OMG this was such a perfect guac recipe. Enjoyed it so much...I used 2 large Florida avacados...(there are 2 kinds). So yummy! Thanks! UPDATE: I decided to make this for Easter this year...and I can't wait to have it later, so I'm eating some for breakfast with white corn tortilla chips! Haha...I did add a total of 2 pinches of cayenne (red pepper), and 1 pinch of cumin to the mixture this time! Unbelievable!! I also used 4 organic avacados, but not the Fl ones, like I previously used, the smaller ones. So yummy!! What a great recipe!

Wonderful Fried Fish Tacos

I made this beer batter for my tilapia that I wanted to deep fry in oil...the batter was great on the fish. I just cubed up the tilapia, dipped it in the batter, and then deep fried in hot oil till golden. :o) I did not use the rest of the recipe though...so, I'm really only giving the beer batter the stars!

Banana Crumb Muffins

HOLY MOLY this a yummy recipe! I made it in a loaf pan (regular size), and I baked it at 375 for 48 minutes...everything is 100% perfect with the exact ingredients listed! WOW...thank you...both my husband & I think it is amazing!! (If you look through the pics for this recipe, my pic is # 376.)

Chuck's Favorite Mac and Cheese

This was good great recipe...I doubled the recipe, but added slightly less cottage cheese than the recipe called for; I also added 2% milk and more of the cheddar and parm cheeses on top, then the breadcrumbs on top of that. I did cut the breadcrumb mixture in 1/2 as well. My hubby and I enjoyed it very much; and I'm taking leftovers to my brother to taste! I'm sure he will enjoy it! Thanks!!

Delicious Raspberry Oatmeal Cookie Bars

Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm!! These are really good! I made them for a New Year's get together at my bro's house tonight; I secretly ate 1 bar already! They are so yummy! Perfect amount of every ingredient; don't change a thing! I did add a little brown sugar and cinnamon/white sugar combo on the top, but it really doesn't need it...perfect without it! Thanks, I'm sure my brother will love these (he's a big raspberry jam lover)!!

Beth's Spicy Oatmeal Raisin Cookies

This year, I decided to make cookies for my co-workers; I'm stacking them, wrapping them in cellophane topped off with a big sparkly bow...and these were the cookies I chose to do that with! I did have to test the recipe out first though, and I must say that this is an amazing cookie. I followed the recipe exactly, and substituted nothing; the only thing was though, I needed really big cookies, so instead of dropping this dough by teaspoonfuls, I took a hunk of it in my palm, patted it into a ball, and baked on parchment paper for 19 minutes at 350 degrees.; I baked 6 at a time (you should have enough dough for 12 cookies this way). After 19 minutes, when they come out, they might look a little under baked, but leave them sit for 10 minutes and they basically continue to bake on the cookie sheet (even out of the oven); they will also firm up some as well. Your end result after taking these steps (for the giant cookies) is a soft and chewy centered cookie, that has a bit of a crispy outer...so perfect! Thank you so very much for this recipe; I will make these over and over again; they are just too good...can't wait to give them away as gifts!

Easy Chicken Fajita Soup

Mmmmmm...made this soup for dinner tonight (eating it as I write this review); and it is very tasty. I think it is a little on the spicy side though; but once you eat it you get used to the spiciness of it. I did add frozen thawed corn nibblets at the end (about 1/2 cup) & served with shredded x-tra sharp cheddar cheese as a topping and cornbread; I wish I had sour cream, but I have none! :o(. I was going to add a can of diced chili peppers, but after taste testing it about half way though the simmer, I decided not to because of the spiciness of it already. Thanks for a great recipe; I will keep in my Recipe Box!

Tomato-Cream Sauce for Pasta

I was looking for a new fresh tomato cream sauce to make for my penne pasta; I liked this one. It does use a lot of heavy cream though; I would suggest cutting the cream in half and thinning it out with 2% milk, if possible (kinda heavy on the tummy). It was a pleasant tasting sauce; I will make again with that one suggestion; husband liked it a lot!

Raspberry Trifle

MMMMMMM!! Yummy...I think that this recipe is hard to make look pretty. I couldn't tell the difference in the layers; but the taste of each layer is really good. However, I did use frozen thawed mixed berries; they were a lot less expensive in the grocery store compared to just frozen raspberries.
