Sweet Zucchini Relish

Just made this recipe today, exactly as written and I must say I too am now a fan! This was the first year that I planted zucchini in my garden and it really took off. I never heard of zucchini relish but wanted to use up some so I thought I'd just give it a try. Was this ever a surprise! I will definitely be making this again and again. Next time I may reduce the sugar a little, use apple cider vinegar and will add some hot peppers to give it zing. It is wonderful as written though, so do give it a try. Also, I was looking in my All American canner cook book and found the same recipe only they made it out of zucchini slices for pickle chips. It said to only process for 10 minutes and it did say to use water bath, so it is definitely a safe recipe, so don't be concerned about it not being safe. EDIT: Tonight I baked chicken legs in the oven @ 400F for one hour. I then put some of this relish on each piece and let it cook about 10-15 minutes more. OUT OF THIS WORLD! My advice, don't limit yourself to just hamburgers & hot dogs with this recipe. Experiment because it is worth it's weight in gold! And do shred the zucchini as stated in the recipe. It makes it stay together better when you put it on something. I can't stop raving about this recipe.

Amish White Bread

Absolutely delicious! Do be sure to cut the sugar in half or it will be too sweet for regular loaf bread. Other than that, this is a definite 5-star recipe. It would also be a good recipe for cinnamon buns, and in that case I would use the full amount of sugar recommended.

Cream Cheese Frosting II

My favorite cream cheese frosting recipe. If you like it sweeter, just add more powdered sugar, otherwise it is good the way it's written.

Grandma's Green Bean Casserole

Wow! Grandma rocks! This is the best green bean casserole that I've ever had. The sour cream and onions really set it off. I didn't have the crackers so I used fried onion rings and it was amazing. This one is definitely a keeper.

Famous Coconut-Almond Balls

These were good but a little dry. Next time I will add more corn syrup and also run the coconut through the food processor. The coconut was just too coarse. Also next time I will use milk chocolate instead of semi-sweet. With these changes this recipe would definitely rate five stars.

Poultry Seasoning

I was out of poultry seasoning and found this one on allrecipes. I too, like many others, cut back the salt amount. I think this has to be a typo in the recipe and maybe it should be two teaspoons instead of two tablespoons. I used it in homemade chicken noodle soup from this site and it was a hit. Won't ever buy poultry seasoning again.

Grilled Shrimp Scampi

This is without a doubt the BEST shrimp that I have EVER eaten, bar none. I continued to marinate while they were cooking and tried to get all the garlic on them. I didn't use the red pepper flakes used a sprinkle of powdered cayenne and it was amazing. I'm gushing over with praise for this recipe. Try it, you will be happy you did!

Chicken Quesadillas

Very good and very easy. I made the fajita seasoning recipe another reviewer mentioned because I had none and it was great too. I cut some calories by not cooking the chicken in oil, but instead used some chicken breast that I had boiled previously and then just cooked the peppers, onions, fajita mix in a pan with a little water, then added the chicken and mixed well. It was terrific. I'm really glad I tried this recipe because it's a keeper! The bacon really added to the recipe, so don't let that out.
