Sarah's Banana Bread Muffins

Thank you Sarah for the great recipe! I was sitting here on a rainy Saturday afternoon with 3 ripe bananas and voila! Some lovely muffins were made. I am trying to follow the "clean eating" lifestyle so I made the following changes to fit into our diet. I took some of the other reviewers suggestions and decreased my "sugar" to 3/4c. and I also used Sucanat (non-refined cane sugar) as a replacement for white sugar. I used unbleached whole wheat pastry flour in place of white flour (it is a 1 to 1 substitution), and safflower oil instead of vegetable oil. I also sprayed my muffin pan with olive oil spray from a "Misto" which leaves no weird olive oil taste, just a healthier alternative. I figure if I made all those changes and they still turned out good they have to be good the original way. I'm still trying to convince myself that this healthy stuff is good, and this was definitely a good "cleaned up" recipe.

Felix K.'s 'Don't even try to say these aren't the best you've ever eaten, because they are' Chocolate Chip Cookies

Just made these and I think Felix has a winner. I have been using another cc cookie recipe for years. I felt the need to try something new. Warm they are very chewy inside with a crisp crust. Very pale, and cooked for 23 minutes and was worried they might be getting dry. I think another 2-3 mins would be perfect for those who prefer a darker, crisper cookie. I also doubled this recipe and as previous reviewers said, add the flour slowly towards the end. I think I ended up with about 6 2/3 cup of flour (doubled). Kids are lovin' em, they were worth breaking my new years resolution for (at least for a minute!). Thanks for sharing!

Chocolate Sheet Cake II

This cake turned out great. I doubled the recipe and used an 11 x 15" sheet cake pan. The pan required 11 cups and this was exactly right. It was very dense, more like a brownie.

Confetti Chicken Salad

Very good recipe, make sure it cools all the way first though. We ate it while it was still luke warm and it was good but would've been better chilled all the way (we let it chill for 2 hours) but I did not refrigerate the rice after I cooked it so once it mixed in with the other ingredients it was not as cool as we would've liked.

Strawberry Cake from Scratch

I would give this recipe 5 stars for taste, but it came out so soft that the whole thing fell apart. I followed the directions exactly and it still came out so moist that it fell apart. My family just picked it apart though and everyone loved the taste!

Overnight Bubble Bread

Wonderful recipe Heidi! My mom is here visiting this week and I made them this morning and everyone loved them! My husband loves pecan pie and caramel and this was a nice combination of both flavors (browned sugar and butter added the caramel). Wouldn't change a thing!

Fish Tacos

Great recipe! I lived in San Diego for a year and used to frequent Rubio's, "home of the fish taco". We loved the taco's and this is about as close as you can get to the real thing. The only thing that I omitted was the capers in the white sauce, they probably would've been fine, I am just not a big fan of them. Thanks Tanya for a taste of my past!!

Amy's Cilantro Cream Sauce

I really enjoyed this recipe, however I did tweak it (as I do with most of the recipes that I have gotten from this site). I was making this for a baby shower as a dip to serve with tortilla chips and I work with a lot of women who don't like really spicy food (which I love!)so I added 1 1/2 limes, and 8 oz of sour cream to tone down the Mrs. Renfro's tomatillo salsa (excellent, but very hot). It came out great, but still spicy for some. Great recipe!

Bacon Spaghetti

This was just O.K. as far as I am concerned and my daughter was just so/so as well. It lacked something, it accidentally mixed with my zesty italian salad dressing and that actually tasted pretty good! Maybe I'll omit some oil next time and add a tablespoon or two of that!

Chicken Fried Chicken

This worked out well for us. The only thing that I did differently was to buy thin-cut chicken breasts by Foster Farms and cut each slice crosswise in 1" strips to make chicken nuggets. It saved time for me not to pound the chicken flat (which I hate to do, so messy!) and saved cooking time as well because of the thin strips. Thank you Cassie for a great recipe that my daughter, husband and I liked equally!

Best Guacamole

I think that this is a great base. I made it today and I tweaked it a little to suit my pregnant palette. I prefer things spicier and saltier, this was a little bland for me. I am going to submit my own version of this I think, I am thinking fresh jalapeno (1/2-1 depending)and cilantro! Thanks Kathy!
