Banana Nut Muffins

These were perfect, and just what I was looking for to use up some very sad banana sitting on the counter. Two days later, and they are still tender and moist. I did swap pecans for walnuts, used 1 whole egg instead of 2 egg whites, and changed up the order for combining the ingredients. Next time I am going to try them with macadamia nuts. Hopefully, that will be as good as I am thinking in my head.

Golden Yam Brownies

Let me start by saying that I do not generally like sweet potatoes or yams, but I had some come in my CSA box that I needed to use. I looked for a recipe that was different and found this one. I just pulled them out of the oven, and they are amazing. I only had 2 eggs, so I added to egg shells worth of water to the recipe to make up for the lack. I was going to put the glaze on, but honestly, they don't need it. I think it would be way to sweet for me if I did add it. I definitely recommend making these. Especially if you don't like yams. :)

Chef John's Italian Meatballs

These are the best meatballs I have ever had, and I didn't even make them correctly. I only had hamburger, so that is what I used. I also did not have in fresh parsley, so I used dried instead. If they taste this good with my changes, I can't wait to make them again with the proper ingredients. As to the quantity, I cut the recipe in half thinking I would make 15 servings (I assumed they meant 1 meatball to equal 1 serving), but I ended up with 26 meatballs. I guess that just means more for later. :)

Charley's Slow Cooker Mexican Style Meat

When I first tested this right out of the crock pot it just tasted like a roast. Good, but not really something I would want to eat on a taco or nachos. However, I made it for tacos, so I was going to try it in a taco. Oh My Gosh!!! I will never use hamburger meat for tacos again. This was so incredibly yummy. I can't wait to make it again correctly. I was missing a lot of ingredients, but it was still so yummy.

Slow Cooker Chicken Taco Soup

This soup was a hit with my entire family, and I have been informed that I need to make it again next year for out Christmas Eve dinner. I did not care for the strong flavor of the beer I used, but that could just be me or the beer (I used Foster's Lager). Next time I make it, I will try substituting chicken stock for beer, and see how that goes.

Pecan Tassies

I personally thought these were pretty good, but everyone else who had them couldn't stop raving about them. I did overfill my tins with crust and filling, so they did not look very pretty. However, I had people coming back to my desk at work the next day asking if I had anymore left.

Peppermint Patty Brownies

These brownies are absolutely amazing. I can't wait to make them with different candy bars, and even without any candy bars in the middle. The brownie itself is perfection, and it is almost impossible to find a recipe for a perfect cake like brownie. Fabulous!
