Slow Cooker Carnitas

No leftovers! All 7 kids and husband really enjoyed this and gave plenty of compliments and thank you's. The changes I made were using water instead of chicken broth, no bay leaves, no coriander and doubled the spices except the cinnamon. I fixed some mexican rice, corn, black beans and tortillas to go with it. Delicioso!

Basil Cream Chicken

The chicken alone without sauce was outstanding. It was moist inside and crispy outside. The kids loved it. I doubled the sauce since I was cooking for husband and I plus 7 kids. My kids didn't eat much of the sauce, so I had lots leftover. The only changes I made to the recipe were adding a little salt and garlic powder to the breadcrumbs and using seeded tomato instead of the pimento. The sauce was very rich and very yummy! Thanks for the great recipe.

Easy Microwave Maple Fudge

I'm giving this recipe 3 stars for being very easy and quick. I used real butter and maple flavoring since there wasn't any maple extract at the store. My fudge turned out very grainy and dry and crumbly, probably from mixing too much, but even though I had sifted the powdered sugar, I had a hard time getting all the lumps dissolved. The fudge was also VERY sweet, even too sweet for some of my sweet tooth kids, but we still ate the whole batch. I might make it again, trying a little less sugar next time. Thanks

Normal Chicken

This gets 4 stars for being SUPER simple and quick to throw together. I did add about 1/3 cup of honey to the sauce to make it a little sweet. All 7 of my kids liked it, and my husband said it was pretty good. Thanks.

Rolled Buttercream Fondant

This was the first time I had ever made or even worked with fondant of any kind. The recipe was so incredibly simple, using ingredients I already had in my pantry. Just mix and use! I did have to had a bit of additional powdered sugar, but no big deal. I love decorating cakes, so I will be using this recipe often and passing it on. THANK YOU!

Health Nut Blueberry Muffins

This recipe was exactly what I was looking for! The kids all loved these muffins, and I didn't have to feel so guilty about serving them for breakfast since they have a lot of wholesome ingredients. The only things I changed were to use unsweetened applesauce instead of banana, and substituted some additional whole wheat flour for the oat bran since I didn't have any. I also didn't add the vanilla or walnuts. The muffins turned out moist and flavorful and made everyone happy. Although the kids didn't seem to think so, I did think they were a little on the sweet side, which would be easy to change. I also used this recipe without blueberries and replaced part of the sugar with honey to make some awesome honey-wheat muffins. This is definitely a keeper. Thanks!

Carrot Burgers

These are awesome! I just made some to try today and they're surprisingly yummy. I did make a some changes, but I'm sure they would have been good done exactly as the recipe is written as well. I didn't have corn flakes so I used Rice Krispies and a little quick oats instead. I finely chopped the carrots in the food processor and used onion powder instead of onions. I added some worcestershire sauce and a little soy sauce for extra flavor and to give it a darker color. I also added a little hot water to make it easier to form the patties. I had to cook them longer than 3 minutes per side to get a nice crunchy crust on the outside. They really are delicious!

Simple Artichoke Dip

This is almost identical to a recipe I've been using many years. My recipe calls for a can of diced green chiles and using an 8x8 pan instead. This dip is SOOOOOOO yummy!!! You will not be disappointed!

Belle's Hamburger Buns

Thanks for the great recipe! All of the kids and my husband thought they were great. After one bite, one of my daughters said they were the best hamburger buns she had ever eaten! I did these in my bread machine and replaced some of the white flour with whole wheat flour. They came out just right, not too wimpy and not too heavy - just perfect for a hamburger with all the fixins. I think the key to not having them turn out too heavy is to add ONLY enough flour during mixing so that the dough is not very sticky. If you add too much flour, I think it would result in a heavier bun. Also, be sure to let them rise plenty long. They should be nice and light. I will definitely be making these again.

Peanut Butter Bars IV

I'm giving these 4 stars because they were very quick and easy and had a good texture. I did not think they had much of a peanut butter flavor, so that's why I couldn't give them 5 stars. I added a little extra salt to the recipe and only two eggs since the eggs I had were very large. I did not find the dough to be very stiff and was able to easily spread it into the pan instead of pressing it in. The kids all liked them, but agreed that they did not have much of a peanut butter flavor. Thanks for the recipe. I will probably try these again, but use crunchy peanut butter next time so they will have more peanut taste to them.

Easy Chicken Satay

This was GREAT! My husband and 6 of my 7 kids loved it. My 7th is only a baby, so he didn't have any. I did add a little red pepper to the sauce to give it a little heat, but other than that, I didn't alter it. Thanks for the great recipe!

Whole Grain Waffles

These waffles are very similar to a recipe for "health waffles" that my mom made when I was a kid. They are EXCELLENT! I like them much better than plain old waffles. I didn't have any flax seed meal, so I used cornmeal instead, which gave it a really nice crunch. I added about 1 tsp. of vanilla as well and about twice the salt called for. Since I have 7 children, I doubled the recipe, and it was the perfect amount for my husband and I and the kids. My kids all love waffles, but I think they ate more of these than any waffles I have ever made. They're GREAT! Thanks for posting the recipe!

Modenese Pork Chops

I am updating my comment on this recipe since I have been using it a while now. I usually make this with chicken instead of pork chops, and since this recipe is so simple, I just pour and sprinkle instead of following the recipe. I use apple juice instead of wine. It always turns out great and my family of 9 really enjoys it. This is a wonderful, basic, simple recipe that you just can't mess up.

Brown Sugar Meatloaf

Excellent meatloaf!My whole family loved it.My husband took a bite and said "You did something different to the meatloaf."I told him "Yes, it's a new recipe."He said "It's better".Everyone asked for more.The only things I changed about the recipe was to divide the brown sugar and ketchup between the top and bottom instead of putting it all on the bottom.I didn't use lean ground beef and used a little more salt and pepper than the recipe called for, but not much.The meatloaf turned out very moist and yummy.There were no leftovers and they were all fighting over the last piece.If you are NOT using very lean ground beef, do NOT add as much milk as the recipe calls for because it won't need it. Great recipe! A real kid and husband pleaser!
