I am happily married with 5 children and 12 grandchildren. I came from an Irish Catholic family and am one of 10 children. I have always loved to be in the kitchen so it only made sense to me to open a catering business with my children.

My favorite things to cook are anything I can make in a large quantity...Chili, Spaghetti, Chicken Paprikash.
My favorite family cooking traditions
I simply love cooking around the Holidays..Thanksgiving, Christmas, New Years. It is the time I get to enjoy the wonderful company of most of my family.

Queen Elizabeth Cake I
I have been searching for this recipe for years....THANK YOU for sharing. This is the cake we always had at our Irish/Catholic gatherings...baptisms, communions, confirmations, graduations and weddings. LOVE LOVE LOVE this cake.

Irish Boxty
Yeah, I finally found a boxty recipe!!! My dad used to make these when we where little and we would bring a ton of them to the Irish American club on Sundays. It would take us all morning to prepare them and they would be gone in a minute once we set them out. Gotta love those hungry Irishmen. He didn't used mashed potatoes though I don't think, as I was quite small at the time. I do remember him adding grated onions to his though. Simply the best!!! When I make them for my family we serve them with real butter and a dollop of our cream.. and a side of applesauce, added some good bacon or sausage links and called it a meal. The kids always got so excited when they heard we were having Boxty for dinner, one of the few times (lol) I could get them to help peel potatoes. oooohhh I am getting so hungry for them now!! THANK YOU SO MUCH FOR SHARING!!!
