Catherine's Spicy Chicken Soup
Delicious!! I was worried it may be too spicy so only did 1.5 tablespoons of chili powder. Also, husband doesn't like too many chunks of tomatoes or onions (lame!) so I did only one can of tomatoes, two cans of tomato soup and used Lipton's onion dry soup mix (and dry onion flakes because I didn't have onion powder)... still gave the flavor without my husband having to bite into a chunk of onion. Also put 2 cans of black beans instead of the chili to make it healthier. Topped with avocado made this yummy soup even better!!
I followed someone else's advice to make the cooking easier: Cut chicken into bite size pieces, boiled in (I did a little over 2 qts of water because I actually cooked 6 full chicken breasts) water for 20 minutes then added all the rest of the ingredients and simmered for an hour. Made a lot, nice to put in baggies and freeze to pull out for later!
