Modenese Pork Chops

Reviewed: Aug. 7, 2013
Quick, easy family pleaser! The only changes I made were to brown the chops in a mixture of half olive oil, half butter, I added more garlic and used fresh rosemary. My picky eaters really liked this, and that says a lot in this house. One of my sons rarely eats meat and ate an entire pork chop. Thanks for a great recipe!

Quick, easy and delicious! I added minced garlic, dried parsley, onion powder and garlic powder to my sauce. Cooked it on low for 7 hours and it was falling apart and juicy. Even my picky teenager liked it! Thanks!!

Gary's Stuffed Mushrooms

Reviewed: Feb. 24, 2013
Loved this recipe! I needed to quadruple it for a birthday party we were attending. I read some reviews and decided to make some changes. I used 4 24oz packages of button mushrooms and doubled the filling. I sauteed the stems in some butter and added a finely diced onion, minced garlic, salt and pepper. I used 1.5 pounds of crab meat. I mixed all the filling ingredients together and seasoned it with salt, pepper and red pepper flakes. I filled a pastry bag with the stuffing and piped it into the mushroom caps. I only used one stick of butter with the garlic to pour lightly over the top of the mushrooms. I added just a little grated parm cheese to the tops and baked them for about 15 minutes (I really stuffed them full). Even just doubling this recipe I had a ton of filling left over. But it was so tasty, I didn't mind! I will make some crab stuffed chicken breasts for dinner tonight! Everyone raved about them and I will use this recipe from now on! Thanks!!

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 22, 2013
This is my go to weeknight chicken noodle soup recipe. Its so quick and easy to throw together and my family loves it. I do usually double the reicpe and add extra veggies because we all love them. I also cook my noodles seperatly and just add them to the bowl as I serve it. Some of us prefer fewer noodles and it makes the soup better when you reheat the leftovers. Thanks for a great recipe!

Brazilian Black Bean Stew

Reviewed: Sep. 9, 2012
Fantastic! This seems like an odd combination of ingredients, but you must try it!! The only changes I made were to use veggie broth instead of water, frozen mango, added a tsp of roasted cumin and some fresh ground pepper.

Sweet Corn Tomalito

Reviewed: Aug. 3, 2012
Great! I couldn't find masa at my local grocery store (super duper small town America) so I subbed Jiffy corn muffin mix and cut the sugar down to 1/3 cup. Steamed this for about an hour and a half and it was perfect.

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Reviewed: Aug. 3, 2012
This was an excellent recipe! Followed it with the exception of putting the mango into the salsa and served it in a flour tortilla. Kids loved the chicken and that is saying a lot! I was worried the marinade wouldn't be liquid enough but it was perfect. I did marinade my chicken for several hours. Thanks for a keeper!!

Chef John's Stuffed Peppers

Reviewed: Aug. 1, 2012
I thought this recipe was great. My family was only so-so about it but they don't care for stuffed peppers at all. The only complaint I have about the recipe is that made as is, you have way too much filling or not enough peppers. I used 4 very large bell peppers and still had a ton of filling left over. I even over over stuffed mine and had extra. I could have easily stuffed 3-4 more peppers with the filling. I just cooked the extra filling along with the peppers in the sauce. Thank you for a very flavorful new spin on the old stuffed pepper!
