Quinoa with Veggies

Reviewed: Mar. 12, 2013
Divine! I roasted some sweet potatoes, acorn squash, carrots, and onions instead of the veggies listed in this recipe. Once these babies were roasted to my liking, I sautéd 2 garlic cloves in some olive oil for about 2 minutes... then, I added about a 1/2 of a head of kale, coating the kale in the olive/garlic oil in the frying pan. The kale softens up a little fast (be careful to not over cook the kale!). Once the kale, quinoa and the roasted veggies were all done to perfection, I layered the ingredients in a serving bowl and Wham!... Amazing!!!! Will definitely make it again! Also read another reviewer's comment about adding some veggie broth in the quinoa water for a little flavor. This dish has tons of flavor so beware... make extra!!!!

Slow Cooker Veggie-Beef Soup with Okra

Reviewed: Jun. 5, 2012
Have to run out and teach a yoga class so this is a perfect healthy meal to leave behind for the family. I added some spice (chili peppers and McCormicks Steak seasoning). I left out the okra and potatoes. I also cooked it on the stove top because I'm short on time today....still yummy!!

Smashed Potatoes

Reviewed: Dec. 29, 2011
Will definitely make theses babies again! I changed up the recipe by adding cloves of garlic and onion wedges during the roasting time. I also left out the herbs listed here and just used simple olive oli, sea salt, pepper and rosemary springs from my garden. They came out crispy on the outside and buttery on the inside. Just right!

Better on the second day but still yummy right out of the oven. Vanilla pudding puts an interesting vanilla twist in the batter. Will def make again!
