Caribbean Coconut Chicken

My husband and guests loved it although I found it to be a little bland. I used a whole can of coconut milk, and it really needed it. I also ended up serving the left over pan juices on the side and that helped. I would make it again.

Apple Pecan Cobbler

This recipe melts in your mouth. It really is to die for! Can be made without pecans if your guests do not like nuts, but the pecans really are the crowning jewel. You can feel confident making this recipe for any occasion. Enjoy!

Chicken Cordon Bleu I

I like to put extra breadcrumbs on the bottom of my baking dish before placing chicken in the dish. Gives it a nice crunch! Yummy!

Spinach and Strawberry Salad

I've made this with romaine lettuce or a spring mix salad and both are very yummy. I also like to add sugar-toasted sliced almonds, a couple green onions, and mandarin oranges to this tasty salad. I always get lots of compliments and it looks so beautiful in a wood salad bowl or on individual plates.

Incredible Punch

This was a big hit at a bridal shower. Got lots of compliments. It is very different than your usual party punch, but it is really good. Make sure to take the frozen mixture out of the freezer at least 1 1/2 hours before.

Banana Pineapple Delight

This recipe brought me a lot of praise, and it is a very refreshing summer dessert. I was pressed for time, so I used 2 (3.4oz.) pkgs of instant french vanilla pudding instead of making the custard. I also added strawberries on top of the bananas, and used oreo cookie crumbs instead of the graham crackers crumbs and real whip cream. It was delicious. My husband wants me to make it again tonight.
