Easy Batter Fruit Cobbler

UPDATE: I've also made this with apples and everyone loves it. Better than mixed berries. I love this recipe because ratio of flour to milk to sugar is the same so I dont need to pull out the recipe anymore. I've also made just the batter in the microwave (omit the butter, you don't need it)- in 2 minutes we have "cake"! topped it with heated sliced strawberries (found in the freezer section at the store in the plastic tub, already sliced with lots of juice when defrosted) and whipped cream. -------------- Wow! This was so easy and so tasty. I am not a cobbler snob in any way - I like fruit. I like dough. And I love combos of the two. I made this in a 9x13 pan, so I about doubled the recipe. I used 3 10oz bags of frozen fruit (blueberries, raspberries, and peaches, 1 bag each). I read several cobbler recipes before settling on this one and followed the tips to add some cinnamon to the batter and to the fruit and I am glad I did. Even though I doubled the recipe, I did not double the butter. I had about 6-7 tbsp in the pan. When I poured in the batter, it looked too oily, so I took a couple tsps out and it was fine. I baked the cobbler for about 1hr 10 min and it was cooked through, the crust was a dark golden brown. Definitely a keeper!

Sangria Ham

This was my first ham attempt, which I served at Easter. Traditionally, the ham in my family is just boiled and served with a side of mustard, but I was in the mood for a glazed ham! Decided on this recipe, because I thought some of the other ones (with orange juice, honey, etc.) might be too sweet (or different) for some people. The ham came out great. The taste of wine or pineapple juice was not noticeable in the cooked ham, so everyone enjoyed it! I made a 10 lb ham (partially cooked), and the only changes to the times was that I basted after 50 min, tented the ham at that point, and also dropped the temp. to 325 then. Will probably try some of the other glazed recipes for comparison, though. But this is definitely a keeper.

Roasted Rosemary Chicken And Vegetables

This was so good! I used whatever veggies I had on hand (carrots, green bell pepper, onion, broccoli) and they came out delicious. The veggies were crisp, flavorful, and browned. The cooking time was right on target. I've been instructed by my hubby to burn broccoli more often since it tastes great! The chicken was very tender. This will be my marinade/coating of choice for roasted veggies from now on. Maybe fresh rosemary next time since the dry kind didn't soften much. I want some more veggies!

Soft and Chewy Peanut Butter Cookies

Delicious! "Soft and Chewy," just the way I like them (not even the edges were crispy!). I did, however, follow some other recommendations and added a little more flour (no more than 1/4 cup) and only used 2 eggs. I used all natural peanut butter (but skimmed off some of the oil)and half of the butter (1 stick) was unsalted. I baked them at around 300 degrees for 18-20 min. Next time I might take them out a few minutes sooner so they'll be a little more gooey. Definitely will be my peanut butter cookie of choice from now on.

Caryn's Chicken

This has become one of my favorite meals (my husband's, too!). The orange and onion combination is heavenly - I've begun to crave it. Very quick and easy recipe (tip: for me, 6 juiced oranges equals about 2 cups). Great with a side of jasmine rice.
