Cabbage with Portobello Mushrooms

Enjoyed this very much. Only gave it 4 stars because I thought it would be better with caramelized onions! Served it with buttered noodles! DH loved it as well. Always on the prowl for good vegetarian recipes. We try to only eat meat once a week.

Pickle Rolls

One piece of advice, either use whipped cream cheese or whip your brick cream cheese with a teaspoon or so of milk. Makes it much easier to spread over slippery ingredients, like ham. Also, a spreadable cheese, such as, Boursin, would be really good, too.

Fettuccine with Sweet Pepper-Cayenne Sauce

This is a keeper! I only gave it 4 stars because, like others, I found the sauce too thin. I ended up adding about 3 oz. of Neufchatel. The only other change I made was to add some chopped shallot to the red peppers in the pan. Also, to save time, I chopped up a jar of roasted red peppers (in water)in place of the fresh red peppers since they are pretty expensive and iffy to find in the winter here in the Northeast USA.

Hot Tamale Pie

I'm sure this is amazing as written but I felt I needed to make it a bit more heart healthy. 1st I used 1# 93% ground beef, drained and rinsed (don't worry, the wet ingredients will make it moist enough). Mixed a can of fat free refried beans in along with fresh purchased store-made salsa and the spices. Added a 4 oz can of sliced olives as a layer. In the corn bread, I used egg substitute and skim milk. Used reduced fat cheeses. We enjoyed this dish quite a lot. Froze half since it was just for my DH and me!

Green Monster Smoothie

I only gave it 4 stars because I am going to add an additional TBLS of reduced fat peanut butter. It's my first green smoothie. I used kale rather than spinach as I like the flavor better.

Chicken Piccata with Angel Hair Pasta

Awesome dish. I changed a couple of things to make it a bit more heart healthy. Baked chicken tenders with a lemon panko crust for about 15-20 minutes. Used 3 tbls olive oil and 2 tbls of flour to cook the mushrooms and garlic in. No butter, But pretty much followed the recipe other than that. After pulling the chicken from the oven, I put it in the sauce for about 10 minutes or so. I will use thin spaghetti instead of angel hair in the future. My husband and I loved it. Was very moist and my husband won't need another bi-pass..LOL

Spicy Avocado Chicken

This looks great as is but since I am trying to cut most fat from my diet, I think I may "Shake and Bake" it then add the avocado mixture With added jalapenos, cilantro and garlic salt

Easy Cheddar Biscuits with Fresh Herbs

These were wonderful but I had to make a substitution. I found I was out of sour cream as I was mixing these up. But I did have some whipped cream cheese with chives. Added a 1/4 cup of egg substitute to the wet ingredients because biscuits tend to be very dry. Brushed some on the top too. Came out moist and yummy. Going to use the leftover biscuits tomorrow morning with low fat country cream gravy.

Jammin' Beef Stew

I made a couple of changes only because I wanted to use veggies I already had, adding a chopped bell pepper, button mushrooms, celery and instead of canned tomatoes used fresh tomatoes from my garden. Added some fresh thyme and summer savory from my garden, as ell. I did not have grape jam but instead used a homemade cherry butter. Made herb and cheddar biscuits to complete the meal. Raves!
