DELICIOUS! At first I thought, what will I do with so much pumpkin bread? Now, I realize why the recipe makes so much; you can't stop eating it! I made this using some reviewer's suggestions: Used 1 cup brown sugar and 2 cups white; added 1 tsp of vanilla; put in 3tbsp flax seed (can't taste it - just for nutrition). I also used 3 cups of white flour and 1/2 cup whole wheat (so I can pretend I'm being healthy). I only had one loaf pan, so instead of making 3 loaves of bread, I made one loaf, 12 regular-sized muffins, and one "mini cake" in a tiny cake pan. I sprinkled some sugar on top of the mini cake, and probably should have on the muffins. These are all SO good! I think adding chocolate chips to the muffin or the mini cake would be really good, too. I used cooking spray on the baking dishes and then coated them with flour - turning out the finished products was a breeze! This is definitely going into my "keep" binder.
