Zesty Slow Cooker Chicken Barbecue
We love this! I have made it several times, and have found that we prefer a sweeter BBQ sauce (we use Austin's Own mild). I also add a little extra brown sugar, as that's just what we prefer. I also usually use thawed chicken, although I have made it both ways and it's just as good both ways. Otherwise, I follow the recipe as it's written and it's fantastic!

Downeast Maine Pumpkin Bread
DELICIOUS! At first I thought, what will I do with so much pumpkin bread? Now, I realize why the recipe makes so much; you can't stop eating it! I made this using some reviewer's suggestions: Used 1 cup brown sugar and 2 cups white; added 1 tsp of vanilla; put in 3tbsp flax seed (can't taste it - just for nutrition). I also used 3 cups of white flour and 1/2 cup whole wheat (so I can pretend I'm being healthy). I only had one loaf pan, so instead of making 3 loaves of bread, I made one loaf, 12 regular-sized muffins, and one "mini cake" in a tiny cake pan. I sprinkled some sugar on top of the mini cake, and probably should have on the muffins. These are all SO good! I think adding chocolate chips to the muffin or the mini cake would be really good, too. I used cooking spray on the baking dishes and then coated them with flour - turning out the finished products was a breeze! This is definitely going into my "keep" binder.

Delicious Egg Salad for Sandwiches
Yum! Made this yesterday and the consistency was great! Just the right ratio of mayo to egg. I added white onion since I didn't have green, and it was very good - just the right amount of crunch. Didn't have paprika, so didn't use that, but still delicious!
