Creamy Cilantro Chicken with a Kick

I gave this 4 stars at first because, out of laziness, I used cilantro that came in a squeeze tube. Made it with fresh cilantro and it made a huge difference! I baked chicken breast and used only 1 pepper. I also used light coconut milk. Turned out great! I find that you have to constantly stir the sauce or else it will turn yucky. I served it with nasi lemak (coconut rice) and some sambal chili. IMO this side makes the whole thing 6 stars!

Squash and Coconut Milk Stew

I've made this several times now, it's so comforting and delicious. I've used light coconut milk as well as half regular coconut milk mixed with half skim milk, and both turned out well (though light coco milk was a bit on the soupy side). I don't think that the sugar is needed, also, I omit the tofu and add some cut up pieces of fish filet (like tilapia or salmon) during the last 10 minutes. I've also used butternut instead of acorn squash, and it tasted pretty similar. This is one of the few dishes I've found where coconut milk is not used to make a curry. So delicious!

Quick Cabbage and Noodles

I am really slow in the kitchen and this did not take long at all. I've made this several times already, it's so easy and comforting. I like to add a little cinnamon to it and also some paprika.

Mini Salmon Loaf

Really good, and much better than a traditional meat loaf. I doubled the recipe but used less oil (about 1 tbs) and egg beaters. I used Italian breadcrumbs and decreased the amount by about 25%. I found that keeping the bones and skin on was not a problem, since it's all soft and edible. I didn't make this sauce though, I served it with a yogurt-cucumber dill sauce and a side of mashed cauliflower. So good! The only thing is I baked it too long at about 45 min and it was a bit dry, so I will probably go for 35-40 min next time.

Cherry Pie

This was pretty easy and good, but not enough cherries. I'd definitely add an extra can next time. Also. I've never used canned cherries before, but apparently they're a weird grayish-burgundy/mauve color. I might add that food coloring next time, since your eyes eat first!

Ninety Minute Cinnamon Rolls

Okay, so I MUST have done something wrong but I don't know what. I almost never follow recipes exactly, but because I'm new to baking, I made sure I followed everything to the letter. Everything was going along fine, until I went to knead the dough. It was SO SO SO sticky, it stuck to the floured surface, my hands, everything. I had to add at least another 1/4 cup of flour to get it to work. When I finally rolled it out to 12" x 9", I found that the amount of filling was WAY too much, like by 1/3 to 1/2 too much. When I rolled up my dough, a ton of it gushed out and made a huge mess. This took me about 2 hours altogether, and the texture was not "gooey" at all but more like a cross between bread and a proper cinnamon roll. I'd really like to try this again, because almost 1000 positive reviews can't be wrong. I wish I knew what happened!

Chinese Cocktail Buns

These are really very good. Buns were soft & filling was the right consistency (it is supposed to be crumbly). I really wanted to give it 5 stars, but like another reviewer said, it seems to lack salt. Although, looking at a couple other recipes for cocktail buns, none of them had salt in the filling. Perhaps I needed to use salted butter and not unsalted? I didn't change a single thing from the instructions. I'll try to add a little salt next time and hopefully I can come back and give it 5 stars! I think that if I've never had "professional" versions of these, I might've given this 5 stars. But the filling just wasn't quite right flavorwise. Also, this is the first time I've tried to open & grate a fresh coconut. Holy cow, that part alone took me an extra hour and I nearly worked my arm off! Next time I will buy some pre packaged coconut flakes instead.
