Vegan Red Lentil Soup
At the end I added a little bit more spice and some sugar to make it more sweet and spicy, but it's a perfect base recipe that you can take and make it to your own taste.

Homemade Black Bean Veggie Burgers
They make decent sized patties, which surprised me, I tend to do bigger portions. Yesterday I had this with mustard & ketchup on top, bun-less because I'm trying to not eat so many carbs. Today I'm eating it with spaghetti sauce and cheddar. I froze the other 6. This is a new item to add to my rotation. I used Thai Sweet Chili Sauce, was out chili pepper so I added a tiny bit more. It was hot enough, without killing my tummy. So much better than boca or morningstar. Will do again.

Sweet Potato, Carrot, Apple, and Red Lentil Soup
When I first found this recipe I made it every week for about 3 months straight. It is SO good just the way it is. My word of caution is to always measure out the ginger, because if you add too much, like I did last time it ruins it. This soup changes flavor every day it sits. The first day it gets sweeter, then it will get more tangy as the days go by. I think it's best at 24 hours.
