About this Cook
Having raised a bunch of kids, I stopped cooking for about 10 years. Now retired, I love to cook again especially for my grandchildren. Living in an RV with an oven that is tiny and doesn't work half the time I have become very inventive at how to cook using other methods.
My favorite things to cook
My Spaghetti sauce, My mothers Beef and Noodles, My German grandmother's creamed spinach, potato salad and her cauliflower. My Swedish grandmother Swedish pancakes, Ebelskiver and Swedish meatballs.
My favorite family cooking traditions
On Christmas Eve we have chili and corn bread and then a big dinner on Christmas Day.
My cooking triumphs
Cooking Chicken Catchatori for about 20 people when I was 18. My mom was too nervous to do it, so I did.
My cooking tragedies
I've never had to throw out anything I've cooked, although I have had to doctor up some...

Slow Cooker Chicken Cordon Bleu
Served this a few days ago. My husband and I loved it. He has requested that this be in our regular rotation. This was so easy and took little time to prepare. The chicken was so tender and the stuffing added a great touch. I did hold off on the cheese and added it just before serving so it didn't disappear. It melted nicely over the top of each chicken breast. Will be making this again and again. Thanks for a wonderful recipe.

Spinach Cheese Pasta
I LOVED this recipe. I made it last week exactly the way the recipe was written. I understand that there are some people who don't like cottage cheese, so they substitute ricotta. I did not because I love cottage cheese. I made no substitutions in this recipe the first time I made it. It was delicious, fast and easy! I am keeping this and will make it again and again. Thanks for a great recipe!! I made this again for dinner tonight. I did do a couple of add-ins. I added one can of chicken (no broth) and some bacon bits. I wanted to up the protein and use it as a main dish not a side dish. I think next time I will also add in some sun-dried tomatoes. I love the way spinach and sun-dried tomatoes taste together. This is an awesome recipe that lends itself to deliciousness with or without extras. Bon Appetite!

Shoyu Chicken
I made this chicken yesterday for Memorial Day at our annual family picnic. It was awesome. I made it exactly as the recipe said. I could not have asked for a better recipe to make chicken new again for the family. They all loved it. I got asked for the recipe more than once and I was very happy I took copies of the recipe with me. Excellent recipe. I will be making this a lot this summer. Thank you for a most delicious recipe!!!
