Loosemeat Sandwiches I

Reviewed: Mar. 8, 2007
I just whipped up a batch of this to use for a dinner later in the week, but I snuck a bite as it came out of the skillet and yum! I didn't have tomato juice on hand, so I used some spicy V8, thinned with a bit of water to cut the heat (so hopefully my daughter will eat it) and omitted the cayenne. Also used liquid smoke instead of browning sauce (not sure what the difference between these 2 is anyway) and cut the brown sugar down to 1 tsp instead of 2. I must say, if I already had the burger buns on hand, I might have one for lunch right now :-) Thanks for the recipe, I'm a huge Roseanne fan so I just had to try it out.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Nov. 24, 2006
I was rather disappointed in the final product of this recipe. After tasting the liquid before starting the slow cooker, and smelling the wonderful aroma all day, I was very eager for dinner that night. I was so disappointed to find a bland soup in my bowl! My family liked it, though, and I do plan to make it again. But I believe I'll just simmer it on the stovetop long enough to heat through rather than slow-cooking it next time. All that flavor must have escaped at some point during the afternoon, and I won't give it the chance again.

Way Easy Pizza Sauce/Bread Stick Dip

Reviewed: Nov. 24, 2006
Very good flavor, quick and easy to assemble too. I wasn't happy with the consistency for a dipping sauce (I imagine it would be perfect for an actual pizza though) so I blended in 1/4 C of water with no noticeable effect on the flavor. Also I simmered it on the stovetop for a bit and served it warm to rave reviews. My breadsticks will be naked no longer... Thanks for posting!

Chicken and Bow Tie Pasta

Reviewed: Jan. 21, 2005
Awesome meal! I swapped the cream cheese for sour cream as I thought my family would like it better. I also changed the prep method a little, I cut the chicken into bite-sized pieces and sauteed it with the garlic, then added in the veggies and stir-fried them for a few minutes before adding the broth. My sauce didn't thicken very well, but that was the only problem. The flavor was heavenly, this will be made again!

Mexican Chicken Soup

Reviewed: Dec. 8, 2004
This was EXCELLENT, my parents and 3 y.o. daughter loved it. Leftovers lasted only through the next day at lunchtime. Unfortuately, I wasn't able to get a decent avacado this time of year, so instead, I mounded some cooked white rice in the bottoms of the bowls and served the soup overtop of it. The only change I made to the recipe was to add a little cayenne pepper for some heat, also I used some pre-cooked chicken meat that I needed to use up so I just whisked the taco seasoning into the broth. Next time I make it, I am planning to sautee some garlic in with the onions and celery, and perhaps add a can of corn. Thanks for the awesome recipe Rilene!

Roasted Herb Chicken and Potatoes

Reviewed: Nov. 14, 2004
This was pretty good. I liked the flavor of the marinade on the chicken, but didn't care for how the potatoes came out. If I use this recipe again in the future, I would skip the potatoes, stuff the onion inside the chicken's cavity, and just baste the bird with the marinade.

BLT Pizza

Reviewed: Nov. 9, 2004
AWESOME, so quick and easy and soooo delicious! I had some Ready Bacon on hand, so I just snipped it into 1/4" pieces with my kitchen shears and tossed it on. Doubled up on the bacon, tomatoes, and mayo. When I went to make the dressing, I whisked together the mayo, 1/2 tsp. of garlic salt, and 1/4 tsp. of pepper with a little bit of water to make it easier to coat the lettuce. Pleased all of the adults and 2 out of 3 kids. This is gonna be a new family favorite! Thanks AMYAME!

Cornish Game Hens with Rice Stuffing

Reviewed: Nov. 2, 2004
Delicious! I made a few modifications to the recipe. I used a regular 4 lb. chicken, and added rosemary, oregano, and black pepper to the outside of the bird. I also substituted celery for the almonds in the stuffing (don't care for almonds) and added a clove of minced garlic. The stuffing is good enough to serve as a stand-alone side dish. This made a wonderful meal on a chilly autumn evening, thanks for posting it!

Beef Caldo with Spinach

Reviewed: Oct. 23, 2004
This recipe wasn't my cup of tea, but the rest of the famliy gave it two big thumbs up. It does make a very hearty meal, especially on a cold rainy night. We ate it with grilled sourdough bread. I might making try it again with some more spices added, I just found the flavor to be somewhat weak compared to the way it smelled and I anticipated it tasting.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Oct. 23, 2004
I made this recipe on the fly, so I didn't follow the cooking directions written in the recipe. The spice blend, however, was incredible, and the meat still came out pretty moist in spite of cooking it in only an hour and a half. I can't wait to try it again and follow the recipe to the letter. Thanks for posting this one!

Game Hens Southwestern-Style

Reviewed: Oct. 17, 2004
I used a regular (4 lb) chicken, and used garlic salt in place of the regular. It had a decent flavor but not as special as I had hoped. However, it had most beautiful, crisp brown skin I've ever managed on a roasted chicken. Didn't make the salsa so I can't comment on that part, but perhaps that's why I found the chicken lacking. Went well over Mexican rice.

Chinese Roast Chicken with Gravy

Reviewed: Sep. 2, 2004
Scrumptious!! I made the following modifications after reading the reviews: I reduced the soy sauce to 1/2 C and the sesame oil to 1/4 C, I also added 1/2 tsp. ground black pepper and 1/4 each garlic powder and ground ginger to the soy sauce before brushing it onto the chicken. I added about 1/2 C of chicken broth to the pan to prevent the burnt taste that several others have complained about. My bird came out perfectly cooked and beautifully browned, and the gravy is heavenly! I would recommend the leftovers for a Chinese chicken salad... would've tried it myself but we had none! I do have lots of leftover gravy as the kids weren't interested in it, so I think next week I will brush the gravy over chicken breasts and oven bake them. Thanks for the recipe Lisamarie, it's definitely a keeper!! P.S. Serve it over Egg Fried Rice by Krista B from this site... you will be glad you did!

Roasted Lemon Herb Chicken

Reviewed: Aug. 25, 2004
Not bad. I was trying to "copycat" the grocery store rotisserie chicken we love, so I may have had different expectations. I didn't care for the mustard flavor, and if I make it again I will omit it. Also my 3.5 lb. chicken took a little over two hours to cook at this temperature, and the skin didn't brown at all. It was a good meal but I found myself wishing I'd bought the grocery store chicken.

Oven Stew with Burgundy Wine

Reviewed: Aug. 22, 2004
Excellent conmbination of flavors, though I must admit I only used this recipe for a base for something of my own creation. I increased the amount of liquid by 3-4 times, keeping the amount of mustard and thyme the same as listed, and it tasted great to me. More thyme would probably have overwhelmed it. Also, instead of putting it in the oven, I cooked mine in the slow cooker after browning the beef on the stovetop. All in all it made for a wonderful meal, my fiance had three helpings! Served with fresh baked black bread from my bread machine.

Super Sloppy Joes

Absolutely no flavor whatsoever, and I even used BBQ sauce in place of the ketchup as suggested by other reviewers. My potatoes were insulted.

Lizzy's Creamy Chicken Bake

Reviewed: Aug. 13, 2004
Not bad, tastes very much like chicken baked with french onion dip on top. At the advice of other reviewers, I used only 1/2 a pouch of onion soup mix. I thought this made way too much sauce for the amount of chicken, half would have done it. I liked it OK, my mom loved it, and my daughter, niece, and nephew wouldn't touch it.

All American Roast Beef

Reviewed: Aug. 1, 2004
Very good, the blend of spices was tasty. I seared mine in a pan first, then cooked it at 350 degrees instead of 375. It took about 2 hours to get to medium rare (for a 3 lb. roast.) I also added 1 C of water to the bottom of the baking dish so I could make gravy.

Sour Cream Chicken Quiche

Reviewed: Jul. 21, 2004
Very good, pretty easy prep too. I omitted the green pepper and added broccoli to suit my family's tastes. Next time I think I will add more sharp cheddar as it wasn't cheesy enough for my tastes, also might cut down on the black pepper. Anyway we had no leftovers!

Buttermilk Bread I

Reviewed: Jul. 20, 2004
Whoever wrote this recipe didn't scale it right, it does NOT fit in a 1.5 lb. machine. There's only supposed to be 3 total cups of flour for a 1.5 lb. recipe, and I knew that, but I went ahead and tried this recipe as written anyway. Big mistake! My machine couldn't even mix it.

Cinnamon Cranraisin Bread

Reviewed: Jul. 9, 2004
Made this for a Father's Day gift for my honey and he loved it! I didn't taste any as I don't care for cranberries. His only complaint was that it could have been a bit sweeter.
