Salmon Cakes II

The best salmon cakes (or patties as we call them) that I've had so far! These are so easy and completely redeemed salmon patties for me. Even when I get lazy and use seasoning instead of an actual onion it's still good. My sister also "hates salmon patties," and I was surprised when I looked over and saw a clean plate without ketchup smears. I'd say it's a keeper in our home.

Chef John's Chicken and Dumplings

I couldn't remember how my mom made C&D, so I was glad to see the video for this and made it (except only using chicken breasts). Excellent stuff! I use milk or half and half instead of creme fraiche, and I'll vary on seasonings, but if you need a good basic C&D recipe, this one's wonderful! My husband loves homemade dumplings too!

Apple Butter Pork Loin

Made this and we definitely enjoyed it. I used a 2.3 lb pork loin roast, and followed Valerie's Kitchen's suggestions. I didn't use season salt (that seemed weird to me), just rubbed with salt and pepper. Cooked it for 30 mins, then took out some juice, poured the apple butter mixture over it, and cooked it for 45 mins more. It wasn't quite to safe temperature, so I wound up cooking it about 25 mins more. It nearly overcooked, but thankfully I took it out before it could be truly overcooked. It had a lovely, sweet, succulent flavor and my husband and sister loved it! Will definitely save, and adjust cooking times.

Cinnamon Stove Top Granola

I got this recipe from a friend. I love it because it's easy, full of flavor, and I can change up what I add to it for variety (fruits, nuts, chocolate, etc). We love to have it for snacks or to substitute for cereal. I'll be making this for years to come.

Simple Whole Wheat Bread

This recipe is WONDERFUL! It was my first time making a loaf of wheat bread and was so simple and easy to follow. Honestly, I don't know why I didn't do this sooner. It has wonderful taste, great density, and didn't take nearly as long as I thought it would to make a homemade loaf of bread. It took just over a week for my husband and I to eat it, and it stayed fresh and moist and delicious the whole time. I won't be buying bread at the store anymore! Try this, you won't regret it!

Chicken Katsu

This is a fantastic recipe, and I DEFINITELY recommend it. I used pork chops the first time, and it was wonderful! My husband and my sister both loved it! I also made a Katsu sauce to go with it (you can find that recipe here too). I'm making it again for dinner tonight, now with thinner sliced pork (I used thick chops last time).

Too Much Strawberry Cake

This recipe and the Too Much Chocolate Cake recipe are now my go-to recipes for cupcakes. They come out so perfectly moist, fluffy, airy, and light with beautiful flavor and they rise nicely too. I think I put my first batch (which I did vanilla instead of strawberry) in the fridge for like an hour or two, and they were even better afterward. Love!

Homemade Four Cheese Ravioli

I really want to give this a five, as I was really excited about this recipe and I think it probably is good when done right. I hope a second attempt will do better, so a four will suffice for now. I had a lot of trouble with this, and it was my first time making ravioli. My dough was really difficult to roll out thin enough, so the pasta wound up being too thick when I cut it and didn't cook all the way through. I couldn't taste the filling either (probably because of too much pasta). I did skip the oven part (simply because I was so tired from rolling everything out), so that could've made a difference. The sauce was my favorite part, and it actually turned out beautifully with great flavor. Any advice on pasta making would be great. Good luck to y'all on this one!
