Chocolate Chocolate Chip Cookies I

My new favorite chocolate chip cookies. I was a little low on the chips, so I cut up some Hershey's milk chocolate bars to make up the difference. Delicious!

Carrot Pineapple Cake I

Mexican Rice II

Even though I (accidentally) didn't follow the cooking directions, this one was really good! I used brown rice, added seasoned hamburger and topped it with sour cream and cheese. Could be made with chicken and wrapped up in a tortilla. It's just good!

Garlic Cheddar Chicken

LOVE IT! It's hard to find new chicken recipes to replace old stand-bys, but this one did the trick. The only thing I did different was to put the crumb mixture in the food processor to make it easier to coat with. Thanks for the recipe!

Chicken Tortilla Soup V

I had leftover rotisserie chicken and needed something to do with it. This was great. I added a few things (black beans, 1 jalapeno) and left out the corn. Excellent. I can't wait to have the leftovers!

Easy Apple Crisp

YUM! So easy and so good. I cut down the brown sugar from the advice of other reviewers, and it was wonderful. My friends loved it too. Went wonderful with vanilla bean ice cream. Thanks for the recipe!

Guacamole

A friend called and said "Bring guacamole, I couldn't find any at the store." THANK GOD, because this was much better than any store brand I've ever had. Exactly what I wanted in guacamole, even though I did forget the cayenne. This will be added to my recipe book for sure!

Mexican Cream Cheese Rollups

These were SO good! No one could have just one! I added a bit of cilantro and cumin to the cream cheese base. I think I might add a little bit of shredded cheddar next time. So easy...and delicious!

Annie's Fruit Salsa and Cinnamon Chips

What a hit! I adjusted because I used frozen strawberries and raspberries, (drained them REALLY well, left out the raspberry jam)but it was still great! Served it at two parties, and got asked for the recipe both times!

Classic Spanish Sangria

This was my first attempt at Sangria. I took the advice of others and used Blackberry Merlot, as well as spiced rum. I topped each serving with Sprite, and it was fantastic! When the Sangria was gone, I filled the pitcher with the remaining Sprite, so it could "soak up" the juices left in the fruit. It was a more "mellow" drink, which was needed after finishing the pitcher of Sangria. Thanks so much for this recipe!
