Spinach Basil Pasta Salad

It's a good base salad. I have another salad that I really enjoy that has sundried tomatoes, feta and use a italian mix for the dressing.

Cake Balls

I made these per the recipe and afterwards reading the reviews (which is very much not like me) BUT be sure to follow the advice of LEXI70. I'm looking forward to making these again - but I will be applying LEXI70's advice for sure.

Pumpkin Cake III

I'm not a huge fan of this recipe at all. I would however take another shot at it with my modifications. Example 1: Reducing the amount of oil. There was so much oil in this cake that while it's moist....there was oil dripping out of it over the following few days that pooled in the center of the plate. Ew. And I thought it was rather bland. If it was not for the cream cheese frosting that I made with it, I would have just thrown it out. That's just my opinion though...my family ate it all up! LOL.

Homestyle Turkey, the Michigander Way

Good little recipe on the fly....I didn't have parsley so I threw in a bunch of other stuff instead (rosemary, thyme, basil, sage, garlic, bay, etc) it was nice and juicy and the juices made a WONDERFUL gravy!

Excellent recipe - followed the recommendations of Beezlys and it came out perfect. I did not care for this cut of meat so may try using a different kind. Highly recommend!

Baked Ziti I

I didn't personally taste this, but the rest of the family did. It was kind of bland according to them unless you hit a spot with lots of cheese. I used ricotta, added wine to my sauce with lots of italian seasoning and garlic powder. I'll be tweeking it for sure but it's a great base recipe and an easy week night dinner if you prep the sauce ahead. Might add in some italian sausage or something along those lines...MORE CHEESE! :)

Wacky Cake VIII

I used to make cupcakes and they came out a little dry...HOWEVER, I can work with that in future experiments. I added a tsp of cinnamon for flare, I'd like to try adding some cayenne and maybe subbing the oil for applesauce. For the most part, my nut/milk/egg allergic son - LOVED this recipe and that alone makes me happy!

Hudson's Baked Tilapia with Dill Sauce

We really enjoyed this recipe! I omitted the mayo and the sour cream and used greek yogurt, I didn't really measure but just tasted along the way. Super light and super easy. Will be a repeat in our house! Served with asparagus and a cold pasta salad, perfect summer meal!

Mama's Italian Wedding Soup

Not bad! I used ground chicken for my meatballs and it came out pretty tasty. I added some garlic powder and a LOT of Italian seasoning. Doubled the spinach and used protein rich pasta elbows. The only thing I would do different and will do to my leftovers is add a chicken boullion cube to enhance the flavor of the broth or specifically purchas Wolfgang Pucks chix broth due to the added seasonings and flavors. Overall - this is a great recipe, I've got the base adn can add flare going forward! Thanks for sharing :)

Chicken Piccata with Artichoke Hearts

Amazing. Made this almost to the T except...I added additional seasoning and by mistake forgot to add the butter at the end. We had it with spaghetti squash and it was absolutely amazing. Will absolutely be making again!

Cheesy Ham and Hash Brown Casserole

Freakin' amazing! Made this with simply 2 eggs over easy as a breakfast for dinner last night and it was a hit! Plan to incorporate this into our Xmas menu. It can easily be cut in half but note that I did double the meat. May sprinkle with some green onions as added color and flavor next time. SUPER YUM!

Black-Eyed Pea Gumbo

Amazing recipe - hearty, flavorful, healthy - perfect. I've been eating a little bit in the mornings and really fills me up and powers me through the day, then I get my healthy carbs out of the way for the day to burn efficiently. I followed a readers recommendation to add smoked sausage, I used smoked turkey sausage and then we either dabbed on Chulula sauce or tapatio. Instant hit in the house! I froze some to defrost at a later time, I don't think that will be too far off. Delicious...thanks for the share!

Traditional Mashed Potatoes

Not quiet KFC, but pretty darn close! I followed another reviewers recommendation of double the butter, milk, salt and pepper - definitely helped! My son is allergic to milk so I used Nucoa and soy milk and his was just as good :)

A bit salty - so I plan to omit the salt. I used Shocktop beer which was pretty good and I like the suggestion of adding cheese. Will definitely try again with different types of beer :)

Pepper-Honey Cedar Plank Salmon

We love this salmon recipe - I thought that I had wrote a review on this before, but apparently I have not. My daughter who hates most fish really enjoyed this recipe. Because I was out of many of the items...I subbed the honey with agave, pineapple juice with orange juice and brown sugar w/ with white sugar and a tbsp of molasses. The cayenne brings a nice heat to the fish. Note....YOU MUST SOAK YOUR CEDAR PLANKS....We were distracted and did not notice that the water had drained...spent about 30 mins straight trying to soak them...needless to say, half way through they caught fire and we had to hose down the BBQ. We removed the fish, put it on a cookie sheet, threw it back on the grill and let it finish...believe me....it had the cedar smoked flavor - haha. GREAT recipe, highly recommend!

Red Snapper Livornese

Not bad. I mixed it up a little bit and used fresh roma tomatoes, added in some kosher salt, upped the crushed red pepper and instead of parsley threw in some spinach. I would have loved to have had it with a side of pasta, but due to a low-to-no carb diet....added a side of spinach. Was very easy to make and fairly quick which is nice for the weeknights after working a full day and getting a decent meal on the table. I would make it again for sure and continue to play with the ingredients. Good base recipe though. Thanks for the share :)

Swordfish a la Siciliana

This swordfish recipe was divine! My daughter *hates* fish and I got her to eat this. I specifically used grape tomatoes, golden raisins, shallots, and omitted the pine nuts (allergies) and it was sooooo perfect. I highly recommend!

Plum Quick Bread

This bread is super yum! The hint of lemon in the batter really is what makes it divine! I omitted the nuts because we have a nut allergy in the house, but I'm sure it would have been even better with them. Next time I make it I plan to try and healthify it by omitting some of the oil and milk in addition to subbing/omitting some fo the sugar and flour. My bread was a little too moist but my plums were ridiculously juicy.
