To Die For Blueberry Muffins

Whatever you do....do not use frozen blueberries. Otherwise this recipe was outstanding!

Mama's Italian Wedding Soup

Not bad! I used ground chicken for my meatballs and it came out pretty tasty. I added some garlic powder and a LOT of Italian seasoning. Doubled the spinach and used protein rich pasta elbows. The only thing I would do different and will do to my leftovers is add a chicken boullion cube to enhance the flavor of the broth or specifically purchas Wolfgang Pucks chix broth due to the added seasonings and flavors. Overall - this is a great recipe, I've got the base adn can add flare going forward! Thanks for sharing :)

Chicken Piccata with Artichoke Hearts

Amazing. Made this almost to the T except...I added additional seasoning and by mistake forgot to add the butter at the end. We had it with spaghetti squash and it was absolutely amazing. Will absolutely be making again!

Cheesy Ham and Hash Brown Casserole

Freakin' amazing! Made this with simply 2 eggs over easy as a breakfast for dinner last night and it was a hit! Plan to incorporate this into our Xmas menu. It can easily be cut in half but note that I did double the meat. May sprinkle with some green onions as added color and flavor next time. SUPER YUM!

Black-Eyed Pea Gumbo

Amazing recipe - hearty, flavorful, healthy - perfect. I've been eating a little bit in the mornings and really fills me up and powers me through the day, then I get my healthy carbs out of the way for the day to burn efficiently. I followed a readers recommendation to add smoked sausage, I used smoked turkey sausage and then we either dabbed on Chulula sauce or tapatio. Instant hit in the house! I froze some to defrost at a later time, I don't think that will be too far off. Delicious...thanks for the share!

Traditional Mashed Potatoes

Not quiet KFC, but pretty darn close! I followed another reviewers recommendation of double the butter, milk, salt and pepper - definitely helped! My son is allergic to milk so I used Nucoa and soy milk and his was just as good :)

Beer Pancakes

A bit salty - so I plan to omit the salt. I used Shocktop beer which was pretty good and I like the suggestion of adding cheese. Will definitely try again with different types of beer :)

Red Snapper Livornese

Not bad. I mixed it up a little bit and used fresh roma tomatoes, added in some kosher salt, upped the crushed red pepper and instead of parsley threw in some spinach. I would have loved to have had it with a side of pasta, but due to a low-to-no carb diet....added a side of spinach. Was very easy to make and fairly quick which is nice for the weeknights after working a full day and getting a decent meal on the table. I would make it again for sure and continue to play with the ingredients. Good base recipe though. Thanks for the share :)

Swordfish a la Siciliana

This swordfish recipe was divine! My daughter *hates* fish and I got her to eat this. I specifically used grape tomatoes, golden raisins, shallots, and omitted the pine nuts (allergies) and it was sooooo perfect. I highly recommend!

Plum Quick Bread

This bread is super yum! The hint of lemon in the batter really is what makes it divine! I omitted the nuts because we have a nut allergy in the house, but I'm sure it would have been even better with them. Next time I make it I plan to try and healthify it by omitting some of the oil and milk in addition to subbing/omitting some fo the sugar and flour. My bread was a little too moist but my plums were ridiculously juicy.

Guinness® Corned Beef

Love. LoVe. LOVE. This recipe! I make it as is and it is devoured everytime! I've made it for the last 3 years for St. patricks day and a few times in between. We boild the cabbage, potatoes and carrots on the side with their own seasonings. True highlight of the month of March! Thank you SO much for sharing!

Pumpkin Muffins II

Replace white flour with 2 cups whole wheat flour and one cup rolled oats; Replace oil one for 1/2 c cinnamon applesauce &1/3c additional pumpkin puree; 2 eggs and 1/2 c sugar. I used canned pumpkin. I got 18 full regular muffins. Very delicious and healthy - to make it a bit of a treat for my kids add in a cup of semi chocolate chips.

Good recipe - I did as others recommended and subbed out the butter for 1/2c oil - added semi sweet chocolate chips and white chocolate chips - these were devoured. Woot!

Panettone French Toast With Orange Mascarpone Sauce

This is a good base to build on. I subbed the mascarpone cheese with Fage greek yogurt and added powdered sugar, 1/4 c concentrated OJ and some orange rind. My daughter drizzled some agave syrup on hers for added sweetness and it was really good!

Pumpkin Pie (Wheat-Free, Egg-Free, and Dairy-Free)

I was intimidated since other allergen free pumpkin pies involved tofu...ack, not in my pie! But this recipe had no tofu and it tasted like normal pumpkin pie. We do not have a gluten problem in our house so I did use my preferred crust, but used the filling and it was really, really good. It came out a little bit denser than I was expecting so may try a wee bit less cornstarch next time, and I may also try ditching the crust, putting the filling in souffle ramekins and then sprinkling gingerbread cookies on top of it. Amazingly good allergen free option, I highly recommend. Thank you so much!

Penne with Chicken and Asparagus

I made per the instructions and then later went back to review others (which I normally do before hand but was under time constraints) and would definitely add in mushrooms or portabellinis, plus veggies that are in season. Agree with others that it needs more garlic - maybe 3-4. I used whole wheat pasta from trader joes which contributed to some of the blandness, but overall with some tweaking makes for a good and healthy dish.

Irresistible Irish Soda Bread

This was a fantastic bread! I made this in my Kitchen Aid mixer and took less than 5 mins. I did add in about a cup of dried currants to add some sweetness plus I had some sitting in the pantry from another recipe. I followed the advice of another reviewer and let the bread sit for about 30 mins after mixing and pouring into the pan prior to baking. Then I let it sit overnight after baking before slicing. Served with Myers Lemon Curd and a cup of coffee (sorry, I can't do tea in the mornin') and it was DELICIOUS! Thank you *so* much for sharing!
