Mediterranean Quinoa Salad

This was a very yummy recipe. I did omit the chicken since it was going to be a side dish for my family. I used half of a green, red and orange pepper because it's what I had on-hand and it made for a very pretty presentation. I served it warm with dinner and then cold the following day with lunch. Definitely will make this again!

Honey Ginger Carrots

My kids ate these carrots which speaks volumes! I thought they were very good and enjoy the flavor. Very nice paired with chicken or fish. They are going to become a regular in our menu at home. Thanks for sharing!

Spinach and Mushroom Quesadillas

I used a little pepper jack along with the cheddar which gave them a nice kick. I also used fresh baby spinach and just sauteed it with the garlic and mushrooms and added fresh diced tomatoes. As written it's a 4 star recipe but with a few minor changs definitely a 5 star!

Chocolate Ganache

This is so easy and so impressive! I've used it to top cheesecake, bundt cakes and dip fruit. I didn't have any dark rum on one occasion so I used almond extract and it was a great compliment to the chocolate. Thanks for sharing!

Roquefort Pear Salad

I enjoyed the flavors of this salad very much. I cheated a bit though and used store-bought pecans that were already sugared but other than that followed the recipe exactly. I enjoyed the way the dressing complimented the flavors.

Red Potato Bites

These were great side dish to our Christmas dinner. My family loved the presentation and flavor of these. I was not crazy about the texture as the directions instructed so I would suggest cooking the potatoes a little longer. I started with a spoon to scoop the insides but quickly pulled out my mellon baller, it made the job a little easier. I didn't have chives but used green onion (scallions) and they were a welcome substitution. Will definitely make again with the changes I made.

Sugar Cookie Icing

I used this icing on "the best rolled sugar cookies" from this website and the result was a professionally decorated looking cookie. I brought them into work and people wanted to know what bakery I went to! I did try out different extracts and found that lemon extract also produced great results (made for a nice, light tasting icing). My coworkers are wondering when I'm bringing in cookies again and keep requesting them! Thanks for sharing!!

The Best Rolled Sugar Cookies

I made these cookies along with "sugar cookie icing" from this website and brought them into work. People wanted to know what bakery I bought the cookies at and were surprised to know I made them myself! Everyone keeps asking when I'm bringing cookies in again! Thanks for sharing!

Applesauce Sandwiches

My kids loved these for breakfast and they are quick and easy! I did add sliced banana to them which made them a bit more hearty and filling. This has become a breakfast staple in this house! Thanks for sharing the recipe!

Raisin Crunch Cookie Mix in a Jar

These cookies were such a hit with my family and friends! I didn't put the recipe in a jar but made them as you would a traditional cookie by creaming the butters and sugars together (I added 1 tsp of vanilla as well) and then mixing in the dry ingredients. I replaced the raisins with craisins and added 1/2 a bag of white chips that I had in my pantry. I would definitely make these again...they were excellent!

Avocado Mango Salsa

I made this the other night with the "Blackened Fish" recipe found on this site as well. It was excellent and just what I was looking for to balance out the spice in the fish recipe. I have tried other salsas similar to this one but they used oil which I didn't find necessary. I couldn't find habaneros so I used a jalapeno pepper instead. I also added some diced papaya since I had that handy and I diced up 1/2 of a cucumber that I needed to use up. Loved this recipe and will definitely make it again!!

Blackened Fish

This was excellent! I didn't use quite as much butter as the recipe called for and it came out fine. I melted 2-3TBSP of butter and brushed it onto the filets before giving them a sprinkle of the seasoning mixture. To cook the fish I used enough butter to coat the bottom of the pan and that worked well for us. I will definitely make this again. The whole family LOVED it! I served it with a mango, avacado and papaya salsa and it balanced out the heat of the fish nicely.

Cranberry Sauce Extraordinaire

I have made this quite a few times and each and every time I get RAVE reviews! I look forward to it each fall and so do my friends and family. This is the absolute BEST cranberry sauce out there. I searched long and hard and now I don't have to anymore! Thanks for sharing!!!

Easy Quiche

This is so easy and so versitle. I make this dish all the time, subbing spinach, broccoli, apsaragus or whatever veggie I have in the fridge. I also sub out the cheeses and meats and no matter what, it always tastes fabulous! I did cut down on the parmesan cheese. I use grated and it adds a bit too much salt to the dish for my taste.

Avocado, Tomato and Mango Salsa

This was excellent!!! I originally made this to top some fish that we were having for dinner and my dh and I devoured it. We ate the leftovers that night with chips. The flavors meld together so well! The second time I made it I couldn't get any fresh mango so I used canned and it tasted just as good!

Grandma Johnson's Scones

This recipe was delicious! I LOVE scones and usually treat myself to one with a cup of tea after the kids have gone to bed. This recipe is excellent. It produces moist and tender scones with such little effort! I used chocolate chunks in the recipe instead of raisins and substituted light sour cream for the regular and it didn't change the texture at all. A very good base recipe that you can dress-up to your liking! Next time I'm going to try craisins and cinnamon chips.

Kecia's Broccoli Salad

This is excellent!! I used Louis Rich turkey bacon because I prefer it to real bacon and substituted coarsely chopped pecans for the peanuts. I serve this at all our family gatherings in the summer and it gets rave reviews each time. Thank you for sharing!

Catherine's Spicy Chicken Soup

This recipe was delicious!! I did make a few changes; I omitted the can of whole tomatoes and added a small can of green chilis and 1 can of black beans. I'm pregnant at the moment and I think this has become my newest craving! Thankfully there's enough left over to enjoy over and over again. Definitely putting this in my cookbook!
