Delicious Raspberry Oatmeal Cookie Bars

I'm sure this recipe is great, but I made some modifications and mine didn't turn out well so here's what NOT to do. I doubled the recipe and like other reviewers I subbed applesauce for half the butter. In the end the cookie crust mixture was not crumbly but more like a paste. I was concerned it wouldn't cook completely but it did. However, the flavor was bland. I even added a little extra sugar but it was still bland. The raspberry filling was very tasty. I added the zest of several lemons to the jam and it was delicious. So I guess the moral of the story is to make two batches instead of trying to double when making substitutions. I will try it again because it got so many great reviews.

Grandma's Sour Cream Pound Cake

I have made this recipe several times and it always turns out great and gets rave reviews. This time my 14yr old niece helped and was a little rough with the "folding" in of the dry ingredients but the cake turned out perfectly. I added 1TBS of vanilla. It was so moist we ate it straight off the plate without whipped cream! Next time I'll try adding some orange or lemon extract for a change.

Russian Mushroom and Potato Soup

My family loved this soup! I am vegetarian so I used Not-Chicken CHicken stock. I added some celery and doubled the carrots. To thicken it I used about a teaspoon of corn starch and a tablespoon of flour, mixed with the half and half. This was for HALF the recipe. I wish I'd made it all! My husband is a devout carnivore and added bacon to his, but tried mine and said it was great even without! I will definitely be making this each fall/winter!

Vietnamese Fresh Spring Rolls

This was so simple my five year old was able to assemble the rolls with just a little guidance! It was healthful and yummy with a few additions. I followed the advice of reviewer Kats11 and made a sauce of 1 part peanut butter to two parts Hoisin. I ended up sprinkling a tiny bit of Stevia in it to be sure my kids would eat it. Turned out they liked the rolls without a dipping sauce, but my husband and I loved them with. My husband insists the addition of Siracha makes everything better! Added julienne carrots too. Yum!

Black Bean and Salsa Soup

Fig and Date Bread

This recipe was just ok. I didn't have figs so I used all dates. The bread was not very sweet and the flavor of baking soda was detectable. If I were to try it again, I'd add golden raisins and some brown sugar.

Cottage Cheese Pancakes

This was delicious! We love the cinnamon-peach pancakes on this site also. The cottage cheese is the key to moist pancakes that fill you up with just a few. I added cinnamon and a bit of flax meal. I also used 1/2 whole wheat flour. This recipe only makes a scant dozen, smallish pancakes. We will double next time.

Indian Saag

This was very easy to make and I thought it turned out pretty good.the only thing I'd do differently is to leave out the salt as it overpowered the other spices. I'm not giving it a higher rating because I liked it more than the rest of my family.

Crustless Cranberry Pie

This was, by all accounts, good but not exceptional. I did as others did and used 3/4 tsp of vanilla and 1/4 tsp of almond extract. Otherwise made as written. I did not make the streusel topping but maybe I should have. It was very easy to make and looked pretty.

Ken's Minestrone Soup

This was a great recipe for a vegetarian soup. I used some fresh herbs and added chopped kale for the last 20 minutes while the soup was on low. I also added the rind from a block of Parmesan cheese. I made some elbow pasta and added it at the very end. For my carnivore husband I put chopped cooked procuitto on top of his. It would have been too bland for his taste without it.

Meatloaf that Doesn't Crumble

I made this for my husband who is a committed carnivore (I and my daughters are pescatarian) and he loved it! Typically he thinks my cooking is bland and because I don't Taste the meat dishes I make him, I have a hard time knowing what to do differently. But he was very pleased with this. I cut the recipe in half and it made one large loaf. However the loaf shrank considerably during cooking. I used almond milk instead of the milk and topped it with BBQ sauce. Very moist and not crumbly, as promised. It was however swimming in grease when I took it out of the oven to check on it at 1.5 hours. I drained the grease and cooked for another 10 minutes and it was perfect!I will definitely make tis again and freeze the second loaf.

Carrot Oatmeal Muffins

These muffins were really tasty! I made all the modifications of other reviewers. Using half the sugar, added nutmeg, 1/4 tsp. clove and ground ginger, 3/4 cup unsweetened applesauce and 1/4 cup canola oil. I topped them with a sprinkling of flax seed meal. I love the cream cheese filling and would suggest making a nice deep well in the muffin cup to put two tsp. of filling in it! Yum

Alissa's Vegetarian Lentil Meatloaf

This was easy and turned out very nicely exactly as written. I took one reviewers advice and made muffins which went over well with the kids. The thyme was the predominant flavor, which we liked, But I'll probably try a different spice angle next time. It made enough for appx 18 muffins, which I cooked as suggested, with foil on top for the first 35 minutes then removed fir the last 15.

Eggplant Parmesan II

This was very easy and very tasty! I halved the recipe, using one large eggplant and it turned out more eggplant would have been better. But the flavor was nice. I made my own breadcrumbs but I found tbe breading got clumpy and didn't stick well to the eggplant (which I also sweated, per other reviewers). I think the bread was too moist. Next time I will dry the crumbs frusta. I'll also use fresh herbs, why not?

Cinnamon-Peach Cottage Cheese Pancakes

Delicious! We were nervous about the shredded peach but it turned out fine. Grated two peaches directly into the mixture. Having made it several times now, i like to leave some chunks of peach. We used buttermilk in place of milk, whole wheat flour, and half tsp. Of ground ginger. Yum!

Eggnog Cheesecake III

This was such a hit last Christmas, everyone requested it again this year. This year I added an extra 1/4 cup of eggnog and topped the cooled cheesecake with a butter rum sauce with chopped toasted pecans. fabulous!
