These were truly terrific! I had never made any sort of dough before, but other than adding some extra flour (it was far FAR too sticky with just what the recipe called for) it turned out wonderful.
In addition to the cheese the recipe calls for, I added some parmesan and some extra mozzerella cheese and it had a very good cheesy flavor combo.
The husband doesn't like hardly any "toppings" so I left his calzone with just pepperoni and mushrooms. After making both calzones as the directions indicated, I sprinkled some chopped green pepper, chopped onion, and sliced black olives on top of my cheesy filling before rolling. I'm glad I sprinkled it on top because it sunk into the cheese as it baked and I had veggies all throughout (I think if I'd mixed it into the cheese mixture, the veggies would've sunk to the bottom).
The calzones were excellent, and there was enough for dinner one night, and then lunch the next day at work. I wouldn't scale the recipe back at all unless making it for one person or not wanting any leftovers. (The leftovers did make an excellent lunch for hubby and I!)
