Seafood Stuffed Avocados

From some of the reviews the instructions must have confused some of the cooks. Having had stuffed Avocados often previously, I sliced the avocado in half, removed the seed and PEELED the skin off. Using the flesh as a "boat" placed it on top of lettuce on the plate and filled the halves with seafood mixture. Recommend using the recipe as a guide for your own favorite mixture. Use just enough mayo or cream cheese mixture to hold together but not soupy. Also very good using a tuna or chicken mixture. Add fresh fruit to the plate, maybe sliced tomato and a mini muffin or crackers to complete the meal. Often both avocado halves are used per serving with stuffing mix overflowing the avocado haves onto the lettuce on plate. Nice for a luncheon meal. I cook by guess and by golly as my mother would say. Add & leave out as suits you. 5 stars when made as stated in my comments

Tamale Pie II

Guess what I really want is a Mexican Casserole served OVER cornbread not as part of the recipe. So that is what we did. Changed some spices to personal tastes and added ripe olives. Served sour cream on the side. WITH MY CHANGES give this 4 stars and will make again. Not a true rate & review of THIS recipe, but see that others didn't like mushy cornbread either.

Easy Mexican Casserole

4 stars for us after changes. Use as base recipe Completely cook meat, drain & blot. Can mix other ingrediants together or layer. Keeping some cheese for toppingl I put chips under cheese topping. Also did not drain beans. As another comment suggested can add anything else your family likes such as corn. will make again.

Ham and Bean Soup

We love any recipe that we can change to suit our own taste. Easy to do with this one. Also can use a variety of canned beans if time is a problem.

Delicious Ham and Potato Soup

Great basic recipe. Addional vegetables and/or seasoning easy to add to suit any taste. We prefer to use instant potato flakes rather than thicken with flour. We tend to get too many lumps with flour

Barb's Broccoli-Cauliflower Salad

My wife always makess this salad when there will be ladies attending. They says it fills you up not out. She omits the sugar & vinegar. Makes her dressing of Miricle Whip Light & milk. Or uses a ranch style dressing. She will make it the night before sometimes. Great as a leftover. She serves at Christmas adding red pepper to round out the holiday colors.

Bacon Wrapped Pineapple and Water Chestnuts

Pineapple is the ONLY improvement I need for this old standby appetizer. Using pineapple slices instead of chunks makes it easier to wrap. The pineapple adds enough sweetness and these are salty enough with out soy souce.

Shrimp Chowder

Good basic recipe. Prefer not to use cream cheese. I added more milk and thickeded with instant potato flakes before serving. Add potato before shrimp or the shrimp will overcook and be tough. Easy to enlarge measures of ingredients to produce larger or more servings.

Corn Chowder

Can never leave well enough alone. I use 1 can creamed corn and 1 can whole kernal corn. Also use instant potato flakes to make a thicker chowder. To make larger servings or have more eaters to enjoy this chowder add more corn & more potato. Makes a great first course or main course dish

Mom's Chili

from Yankee Mom. We make these additions and make 2 pots at once. Add 1 lb more ground beef. Add 1lb ground turkey. Add more beans along with juice - kidney beans, chili beans, pinto beans. Celery (Sliced or chopped). Add more of any of the originally listed ingredients. Makes thicker more hearty soup. Cook up several pots at one time... it is dandy from the freezer.
