Tzatziki Sauce

To keep this from being runny you need to let the yogurt drain. I used Greek yogurt, put it in a collander and let the liquid drain out. Also, drain your cucumber well, chop it and place into a dishtowel and squeeze the liquid out. Then you can mix it and put it in the fridge. I like to do mine the night before, it gives it a lot of time to settle and permeate the yogurt.

Traditional Gyro Meat

Fantastic! The only thing I added was a little more salt to it. Traditional taste, and I made home-made tzatziki and pita's for it to go on. Slightly time consuming, I would make this the day before and re-heat. My husband and kids loved it, I had a difficult time slicing the meat because hubby's fingers were in the way stealing my "imperfect" pieces - meaning anything he could get his fingers on.
