Pumpkin Whoopie Pies

I have made these whoopie pies close to a dozen times since I found the recipe and they always turn out excellent. Everyone loves them because they are not overly sweet, but are super moist. I always add a little extra cloves or "baking spice" to make them extra spicy, just because that is the way I like them. If you beat your egg white until stiff peaks form the frosting is even fluffier. It is true that they turn out pretty much how they are put onto the cookie sheet so using a piping bag (or a ziploc bag with the corner cut off) will result in a smoother cookie top. I have never tried the cream cheese filling but I would think it would be too rich. The best part about this recipe is you can eat more than one, because they are not icky sweet.

Chocolate Mint Cookies I

I was expecting a rich, brownie-like cookie and what i got was more like crispy flat cookies which didnt seem to go well with the mint. I had volunteered to take these to a Christmas party but it looks like I will be making something else instead :(

Lemon Poppy Seed Cheesecake

I made this one for Thanksgiving. I have to say it did not rise well and stayed very compact and heavy. I could barely taste the lemon at all. I have made several cheesecakes from this site and this was my least favorite. My oldest son seemed to like it but for the money I spent making it I would have chosen another recipe I had already used before with better success

Amber's Sesame Chicken

Ok, Ok, so I didnt follow the recipe, only because I couldnt find the chinese five spice. I didnt think it would work out if I omitted it so I got resourceful and went to my local Hannaford where I found their brand of Inspirations sesame ginger sauce, I mixed this with the honey and sesame seeds called for in the recipe and my family went nuts! it was soooooooo good, and we all swore it was better than take out, this is an excellent recipe modified or not! If I could find the chinese five spice I would make it both ways but this was truly a great recipe, the chicken was so tender! I served it alongside some oriental style rice and it was a very delicious and filling dinner!

Philly Cheesesteak Sandwich with Garlic Mayo

Oh my! what an awesome recipe! we gobbled them up and debated who would get the last sandwich, it was so wonderful!!! I did scale way back on the mayo but put enough on to taste the garlic/mayo combo and it really made all the difference in flavor. I will be making this recipe again and again!

Party-Size Greek Couscous Salad

I was very surprised that everyone really loved this recipe, since I dont make couscous very often, but it was so easy to make and had a great flavor, I used Ken's steak house brand greek salad dressing and it tasted great. I did wait until the last minute to add the feta since it does tend to get soggy if marinated too long. But otherwise a new favorite :)

Beth's Spicy Oatmeal Raisin Cookies

everyone in my family loves these cookies, and since none of us are big on raisins that is saying a lot! I made a batch and literally in less than 24 hours my two boys and husband had eaten them all! I managed to get a couple straight from the oven and they were really great. I made sure I watched them so as not to overcook them and I also have made them using 1/2 cup less oatmeal, I prefer a less chunky cookie myself, and both ways come out great! My oldest gets excited when he knows I am making them and asks for them in his lunch, and he is raisin phobic!! :)

Chicken and Artichokes

everyone in my family enjoyed this recipe..I am a total artichoke lover but everyone else is not.. but no one seemed to mind them in this recipe. I did slightly alter it by using a white merlot instead of Sherry and I also butterflied the chicken as apposed to chunks. The gravy it made was excellent and plenty enough for potatoes, couscous or rice. I will be sure to make this one again, so I can have my artichokes and everyone will still actually eat them!

Amish Macaroni Salad

I really liked this recipe, I did make some minor changes, common sense told me a whole cup of sugar was just way too much, I put only 1/2C in but probably could have even used less with equally good results, I also put in a couple of extra eggs and used only 1/2 teaspoon of celery seed, since I have learned from experience that celery seed can be a bit overpowering.. besides these few minor changes, it came out very well and my kids including my two year old ate it, which never happens with any type of pasta salad with vegetables in it..I will definately keep this recipe

Sweet Potato Cheesecake

This recipe was the bomb! just awesome.. came out nice and high and the topping was perfect, just the right amount and it wasnt too runny either. I have tried many other cheesecake recipes and this is definately an all time favorite! my family fought over the last piece

Whoopie Pies VI

I guess I am the exception to the reviews. I have had really good whoopie pies before and these just didnt do it for me. You definately need to bake the cookies less than ten minutes 8 tops to keep them moist, I also thought the filling was more like frosting.. a bit overly sweet and rich, I also ran out of frosting before I used all my cookies but the kids seem to enjoy them without the filling anyway.. I might use the cookie part of the recipe but will keep searching for that perfect not-too-sweet , fluffy filling I remember as a kid was so good :)

Pumpkin Cheesecake in a Gingersnap Crust

This is a great recipe although it did need some tweaking...the flavor needed something more so I added 1tsp. nutmeg and 1/2 tsp. cloves. I also will add more sugar next time I make it,not sweet enough for me.I would also put in less hazelnuts since the oils from them leaked out of the bottom of the pan, making the crust a little too greasy. It took an extra 20 minutes in the oven to cook it til set but was well worth it. With the new changes next tiem I am sure it will come out even better. Really nice change from the usual Thanksgiving desserts!

Chicken With Mushrooms

I liked this recipe o.k., it didn't knock my socks off like I expected. I feel it would have come out better using flattened chicken breast fillets since it takes so long to cook a large chicken breast,also the mushrooms shriveled up too much. I didn't care much for all the watery/cheesy goo at the bottom of the pan either. The Chicken itself was tender which my husband and I both liked but I didn't see what was in the pan to put over noodles or rice. This one wasn't my favorite...

Slow Cooker Stuffing

I thought this stuffing was great as did everyone who tried it at Thanksgiving this year. I did use some common sense and only put in about half of the chicken broth and I also added a pound of sausage I precooked and chopped. I cut back on the butter too, it seemed like it could get too greasy with all of that butter, I only cooked it for 4 hours which was plenty! 8 hours and I would have ended up with a black stuffing brick! I just kept it on low and watched it, if I felt it was getting dry I added just a touch more broth and it came out just wonderful, it is definately the best stuffing I have made in my wife/mommy years to date! I highly recommend using this recipe just use some common sense along with it.

Best Chicken Pasta Salad

This salad was a surprise hit with my guys, I used grape tomatoes instead of cherry and only 1/4 of a Vidalia onion since a whole one seemed way too much, my husband recommended I also add in a chopped cucumber in addition to the avacado since it is so mild in flavor. I am not a fan of ranch anything, but this was really good, I would recommend it to anyone looking for something different from the usual mayo covered salads you find at cookouts.
