Potato Skillet

I don't really like eggs. This recipe gives you some options though. The baked egg is good for throwing more stuff in. I added some garlic additional ham and a little feta cheese. Nice recipe thank you.

Chef John's Flour Tortillas

I was worried about making these. I live in Vietnam so a tortilla press was out of the question, also hortning is not readily available here so I used butter. They were a huge hit and easy to make. I have made them a few times now. The last time I used them to make mini pizzas. I used some leftover spaghetti sauce fresh veggies, some ham freash basil and mozzarella and parmesan cheese. Griied in the toaster oven, the critics must have thought they were great (kids) because I never had a chance to try them myself LOL...

Maple Salmon

Just got done eating this and it was delicious. I grilled the salmon fillets on the BBQ, I just hit the grill with a little vegetable oil (not olive oil, it burns too easily) right before grilling so the salmon wouldn't stick. I placed the fillets skin side up on a medium high heat to impart some sexy grill lines. After about two minutes I flipped them over and fineshed them off. Nice...
